I love cilantro (aka coriander). Here's a recipe I use it in that goes well with guacamole....fresh veggies, no added fat, protein. Eat with chips (baked or some other healthier choice).
Ceviche - popular in many Latin American countries
½-¾ lb raw shrimp, peeled, deveined, rinsed and patted dry
4-5 limes, roll on counter or microwave to get maximum juice
1 small white onion, chop in small dice
2 medium tomatoes, cut and squeeze out pulp, small dice
1 small jalapeno, seeded and finely diced
1-2 T Cilantro, chopped
Cut shrimp into small pieces, similar size to tomato and onion. Put in non-reactive bowl (such as glass or ceramic) with lime juice from 3-4 limes. Put in refrigerator for 3 to 4 hours, depending on how small the shrimp is cut up (1-2 more hours if the shrimp is not cut small). Shrimp is fully cooked by the lime juice when the shrimp is completely opaque and pink/white. Drain, reserving liquid. Gently combine shrimp, onion, tomato, and jalapeno and add back a small amount of lime liquid used to cook shrimp (this is safe to do!) or use fresh juice from remaining lime. Refrigerate until ready to serve (best served freshly made). Add cilantro before serving with tortilla chips.
