Seriously mate, you're doing really well! I'm so inspired by reading about all you're doing - AND eating! (you have a great diet and it's giving me ideas of what to cook, myself).
Sorry to hear that shit about your employer. I say if you find another job, wait till you get paid then just don't show up for work for 2 weeks. Then, when they start frantically calling you, say, "Oh I'm sorry, I seem to be a little late in getting my resignation letter in... You understand, I'm sure..."

They would totally deserve it and might pick up their act in future.
