leg extensions place more stress on the anterior cruciate ligament than squats...and are not as functional as squats, as they don't duplicate the weight-bearing, synchronous multi-joint movements associated with sporting activity
leg presses are just bad for your back
Squats are the king of strength exercise for the lower body, when performed properly that is. That said about squats I don't know what the long term effects are on the spine. It doesn't seem to me too good an idea to compress your vertebral column day in and day out with hundreds of pounds of pressure.
