I've always been 100% consistent with my weigh ins. I have the same routine. Wake up, use the bathroom, disrobe, weigh. First thing I do every morning trying to get it at a consistent time of day.
I don't have any particular days of the week that I do better or worse, but I do tend to go out to eat on Fridays with a couple of co-workers so Friday morning would probably be my lowest point in the week if I've behaved myself.
I have a FitBit and it tracks my exercises automatically in a database, but before I had it, I was using the Under Armor Record app on my Android and I could set intervals for it to tell me how long I'd been exercising. I might have to go back to using something like that if only to have a point of reference without having to check constantly during my workouts.
The thing about this is I still carry most of my excess weight in the middle, so even though my face, neck, thighs and arms have slimmed up and look pretty good, I've still got a big gut and that's the biggest hindrance for my self-image at the moment. But I still have a good 50-60lbs I would ideally like to lose so I have tons of time for that to shrink down.

Funny thing about my weight loss. I started at 320 pounds and weigh about 180 now. I still see myself as fat.
