Losing the vanity 5kgs

Made custard, I used whole eggs instead of just the yolks for that sweet sweet protein. For Emily, here is how you make custard (vs the version I just made which totally worked also!)

  • 2 whole eggs (normal custard you would use 4 yolks only)
  • 500ml milk (I used almond milk)
  • 1 heaped tbsp arrowroot (varies depending on how you like your custard)
  • 2 tsp vanilla essence
  • Sweetener to taste (I used a mixture of natvia and stevia drops' regular custard you would use about 1-2tbsp sugar)
Get the milk, sweetener and vanilla heating on the stove till it looks like it's going to start boiling.
While it's heating, whisk together the eggs and the arrowroot/tapioca until it looks smooth.
When the milk is heated, start whisking the eggs and slowly pour the milk into it until its all incorporated, then put back on the heat. Keep warming and stirring with a wooden spoon until it thickens and coats the back of the spoon- then its done.
Pour into a large bowl and whisk for about a minute to cool and make sure there's no lumps, strain if there are any.
Serve!

I let mine cool then got my chopped cup of pineapple and put it in a freezer Bag and shook it up with 1tsp cinnamon and 1tsp natvia, then grilled in the fry pan for about 5mins so it kind of started to caramelized and was warmed through. Added it to the custard with a 50g glob of coconut yogurt.

Was soooo good, reminded me of pineapple upside down cake haha. Not to mention the volume, omg. I'm so full. Volume foods are my saviour!!
Oh, YUM! I'm saving this & trying it, even though I absolutely do not like cooking......I think I am drooling! xoC
 
Cate- I love cooking! Probably because I love eating and know I have to be creative if I want to reach my goals and eat something close to what I really want lol. Totally worth it!

Good day today! Didn't get up to much, spent most of my day reading.

Another one of my guilty pleasures- the Nosleep forum on Reddit. It's short stories people write that are kind of interactive because you have to treat everything submitted as real. Sure there's a lot of crap on there but so much stuff that sucks me in, lots of weird/ unexplained/ crime/ alien/ supernatural type stuff. Great time waster!

Had another good day. Food was good and I went for a 40min walk. Went and watched The Mummy with E, pretty average... however I snuck a tub of Halo top in which was the best idea ever. So good. E is suck now though, he was feeling a bit off beforehand and he was pale and clammy when we left. Thinks it's some kind of virus, boo. Just generally feeling unwell.

Well, made it through a week! Thought I should summarise how I think it went... I'm actually pretty stoked with this week, didn't binge and even though I didn't have my cheat meal on the planned day, I didn't let it throw out the rest of my week. Also got in 4 good training sessions and walked every other day! I think I'm going to stick with the 4 sessions instead of adding on the HIIT for now, not because I think it's too much but because every day with my back is so hit and miss. I don't think I wrote it yesterday but I only walked for 40mins because of a sharp pain in the good side of my back- and then today I'm completely 100%, like I could go and deadlift or something (which I won't, but my point is it feels like I haven't been injured today). So weird.
Feeling a bit bleh today, period still hasn't started but should today and tomorrow, can usually tell because my boobs have stopped hurting. I'm not super regular with my period and I think the change in diet would have affected it, it's usually anywhere between every 4-6 weeks so I'm not worried. Feeling pretty puffy though, I'm a bit constipated I think from upping the carbs and protein this week. Have been really on top of my fluid intake but hasn't helped enough. So can't really say whether I feel like I've put on a bunch of weight or lost any haha, won't be able to tell till my hormones have calmed down and I've gone to the toilet properly!! Clothes aren't tight or anything despite the bloating so I haven't piled on a heap of weight in a week!

Bit anxious about the week coming up- I have uni induction on Tue which I am stressed about. It goes for most of the day- 8.30-3.30. I'm not a shy person, I'll put that out there. I was in sales and I am great at approaching people and building rapport- but I what would be considered an extroverted introvert. Or a social introvert. People exhaust me- there are very few people in this world that don't suck the life out of me just by being around them, E being one and the rest of the people I can count on 1 hand- only 2 of those other people I'm not related to. I keep my friend circle really small for this reason, and even then if I make plans I am really bad at backing out because I would prefer to stay in bed and watch movies. I'm trying really hard to change this, actually in a social ladies group on FB and going to a dinner next Fri night and I think they have a high tea planned in a few weeks. Anything like this though- social events, a day at work, even hanging out with friends, I always feel like I need to collapse in bed for a day after and not reply to texts. Even if I have a really good time while I'm out.
Also stressed about starting study in general. Had a bit of a panic about it last night and changed my timetable- it probably means just to do the first year it'll take me 4 trimesters instead of 2 or 3 but I think it'll mean I have more chance of success this way. Also textbooks are fucking expensive and I'll only have to get 2 for 1 course I'm taking, the other two are foundation courses and don't require books. So taking maths, anatomy and physiology 1 and scientific writing. I still have classes Mon-Fri doing this though. It's going to take longer though because most classes aren't available in trimester 3, wheras I can take any in 1-2. So I might end up only being able to do anatomy and physiology 2 next trimester, then do the rest over tri 1 and 2 next year.
Also to save money I'm going to be walking to and from uni when I can, it's about 35mins each way. I'm right next to a tram stop where I live though so if it's raining or I'm having a bad back day I can just jump on the tram.
I think it's just fear of failure to be honest which is pretty normal I guess. Also, the money thing is starting to stress me out a bit. I texted an old co-worker yesterday to ask if he knew what was going on with commission (my old job was notoriously bad at paying, I'm still owed money for the first quarter) and he says its supposed to be getting paid this coming Fri. We shall see I guess- if that's the case I have nothing to worry about. But I have this awful feeling that Fri will come and go and I'll be writing a strongly worded email to payroll instead. Bleh.

Wow, didn't mean to write a novel... I just went for a big walk and this was all the shit swirling around in my head, guess I needed to vomit it onto a page haha.

Snack 1 cup veg puree, 60g drained weight salmon in springwater
Dinner Slow cooked beef, corn, broccoli

Drinks 2 long black coffees, green tea, chamomile tea, 3L water

Exercise 1hr walk
 
I get what you mean about being around a lot of people being exhausting. If I know them well, I don't mind, but strangers take a huge amount of energy sometimes. Still, I get really bored with too much time on my own.

Well done on week 1, sounds good to me!

Ended up having a seriously shitty food day and then got my period so feeling nasty. Have a job interview tomorrow too, urghhh. Also I applied for like 20 jobs and its unclear to me what I'm actually being interviewed for tomorrow...

Also had a splurge on the credit card while I felt like shit which made me feel worse. Don't know what is wrong with me, going to go to bed and start fresh. Did get a killer back workout and a walk in though!
 
I feel the need to properly address yesterday now I'm in a better mood.

Basically I had to withdraw from uni, I spoke to an enrolment advisor about taking the foundation courses which I was enrolled in. Basically the two courses I was going to take intersected with 3 of the actual courses I need for the degree, which wouldn't be an issue except the only courses available next trimester require you to have completed those courses. So basically I would be taking 3 courses this trimester... one next trimester... and the final few dispersed over another 2 trimesters. It was too fucky for me, I deferred until next year so I can take the foundation courses trimester 1, then do the actual diploma over tris 2 and 3. It put me in a really bad mood though, I wasn't looking for work too hard the last couple of months because I wanted uni sorted first. Ate a lot then went on a job application rampage, applied for about 20 jobs then got an interview for this morning and couldn't figure out what I was interviewing for!! Oops!!!! I went though and it went well, got a text when I got home saying I got the job and start tomorrow. It's Mon-Fri, 9-5, full time, fairly decent salary. Just call centre work, I think I'll be ok. It's lead generation too, not selling. Seemed like a very chilled out place. Lots of benefits/ bonuses/ competitions/ parties (they have a monthly office party out somewhere, a half year black tie ball and a huge xmas party). If I can handle it for 3 months... I will be stoked. That is the goal at this stage, stick it out for 3 months. I can handle boring, I can handle repetitive, I'm on the phone so if someone abuses me... I can literally hang up.

So I'm actually going change my countdown and my goals. Basically I'll be pretty sedentary now besides my training, so switching back to my initial meal plan. Decided to get down to the 60kgs (it'll be a lot easier with full time work) and see how I go- if I lose weight really fast I'll go back to my newer plan. Will have to for maintenance anyway. Also I'm going to change the day countdown for 12 weeks from Monday- So if the job is truly crappy, I know how much longer I'll be sticking it out for haha. And I should absolutely be at my goal weight by then, and I aim to have majority of the credit card debt paid off from being unemployed too. I'm hoping I can do it till the end of the year (I mean, I'll stay as long as I can but I know call centres tend to get rid of people that aren't getting the numbers so this is more if I'm terrible at it and get fired).

Well then! Potentially interesting few months ahead! Already prepped tomorrows lunch and got dinner out, basically whatever I have for dinner will be lunch the next day and I'll just be prepping snacks.

Breakfast 3 eggs, 1 cup stir fry mix, satay sauce with 20g PB, tamari, garlic
Snack Protein shake
Lunch (this is amazing even though it sounds super weird) Chickpea flatbread made from 1/2 cup chickpea flour and 2/3 cup water with salt, topped with 1 cup corn and 1 cup spinach, grilled together, smushed with 100g guacamole and spread all over the flatbread and cut up like pizza
Snack 30g almond butter, 1 scoop Amazing grass greens powder all blended together with a cup of water
Dinner 2.5 cups stir fry mix, 130g squid, butter for cooking and fresh lemon juice

Drinks 2 long black coffees, chamomile tea, 3l water

Exercise None really, just a walk to the tram and back. Probably a total of 2omins walking all up for both trips there and back

Whoops, missed a day! Suddenly I have so little free time haha. 2 perfect days in a row though!

New job is totally fine and cruisy. I thought I would hate a call centre but to be honest its easy work and the people are fun. I think there are going to be draining days for sure but 3 months should be mostly easy. Targets seem reasonable too, I made today's and think more than half the rest of the staff did too.

Anyway.. yesterday's food.

Breakfast Purebred bagel with 30g cream cheese and 50g smoked salmon
Post workout Protein shake
Snack 1/2 cup blueberries, 30g almond butter, cinnamon
Lunch 120g salmon, 1/2 cup basmati rice, 2 cups stir fry mix

Dinner Beef with broccoli

Drinks 2 long black coffees, 3l water

Exercise 45mins legs (got up early before work). Manages both lunges and step ups with no back issues! However my ads is so sore today

Yeaaa so that was yesterday. Today I got up at 530 to walk to the gym which was pitch black and creepy- so I'm changing my training days!! Going to do my 2 gym days on the weekend and my 2 legs at home days during the week.

Yesterday was a mostly good day, we went to a different restaurant for dinner so picked something I thought was ok. We had Asian and I got a spicy calamari dish, it came in a tomato based sauce which was really good and came with steamed rice. I only ate about a quarter of the huge bowl of rice that it came with and had a diet coke too. Also went for a 20min walk in the morning.

Had fun out too, met another chick around my age with very similar interests so that was awesome! Had a good chat (she was mutual friends with the girl that is also my friend). She is an acupuncturist, was rrally interesting listening to her talk about it!

It's the weekend, yay! I think E and myself will go to the movies tomorrow to watch Transformers, no other plans yet. He is still sick too, no fever or anything anymore but he has a chest infection now. Had a few crappy nights sleep from his coughing so we are both pretty tired!

Poor E. Hope he feels better soon. I used to get a chest infection every Winter (& sometimes in Summer too). They are exhausting!
Your food sounds SO good! I must try coconut yoghurt.

Thanks Cate!!! I did have a nice weekend, we chilled out yesterday and watched the rest of the new season of Orange is the new black and today went and watched the new Transformers movie which was possibly the worst thing I've ever watched. Haha. Also been busting out a multiplayer PS4 game which is super fun and frustrating, E rage quits way before I'm ready to though. We had fun though!

Did have an extra meal last night, since I didn't really have a cheat meal I'll count that as it. Had a tub of Halo top with 50g PB. Today was good-

64.8kg today, back where I was when I started haha. It should only take me a couple months from here to get to goal (if that!) from here.

Perfect day! Yay, great start to the week. Work was fine, settling in I think. Went really fast.

Tomorrow I'll be training legs before work and grocery shopping after work.

I'm an aunty again as of yesterday, my lil bro and his girlfriend had a baby! I hate that I live so far from my family sometimes as I have no idea when I'll get to see him.

Had anther perfect day, did a really good leg session this morning and already feel pretty sore now haha. I seem to have picked up a cold though, my throat was a bit funny this morning and I seemed to slowly get congested sinuses over the course of the day. AHHHH. Loading up on olive leaf extract and greens, fingers crossed I'll feel better tomorrow. I never really stay sick for long.

Meals for tomorrow are all done and prepped-

Breakfast 120g roast beef with satay sauce (20g PB, tamari, garlic)
Snack 20g WPI and scoop of Amazing grass greens powder in a cup of almond milk
Lunch 120g salmon, 2 cups stir fry mix, tbsp. butter
Snack 1/2 cup blueberries, 30g almond butter, cinnamon
Dinner 120g roast beef, mushrooms, corn

Drinks 2 cups long black coffee, green tea, chamomile tea, 3L water

Congratulations Aunty allthefoods ! How far away does your family live?
I hope the cold goes away quickly. Do you have any lemons and honey? I have a hot lemon drink every night, Summer & Winter & haven't had a cold for a couple of years. I usually also add a Nerada lemon & ginger teabag with it or sometimes some powdered ginger. (I hope I haven't mozzed myself & I wake with a cold tomorrow!)

Thanks Cate! My family are far south WA and I'm kind of middle of Qld so it's a fair distance. I never really seem to get sick so this is pretty weird for me, I think it's likely just stress of suddenly changing my schedule. Haven't adjusted to going to sleep early and waking up early yet, I think it's just a heap of stress on my body. At this stage I think it 's just a head cold so I'm sure I'll be better soon.

I went for a 30min walk this morning. It was a long day of feeling tired and sick, got through work but then when I got home I just wanted comfort food so I had my cheat meal after dinner- halo top with a huge scoop of my healthier Nutella and a huge scoop of PB. It was amazing. Also had a decaf coffee with a bit of milk in it.
