Hubby came home with a bit of a surprise tonight

We have been cooking most of our meals in the air fryer recently but I was finding it a touch small for a whole chook (a small chook fits just) hubby just came home with a much bigger air fryer that I can fit a leg of lamb in, I have a 2.5 kg leg in the fridge that I will cook tomorrow in it, providing us a tasty evening meal then cold meat for a couple of days possibly lol.

I love lamb but it is sooo expensive at the moment, even better is Hogget but our butcher cannot get any, having a little more age on the sheep before slaughter gives a much stronger yummy flavour. We have raised our own meat goats in the past, might be time to look at picking up a lamb or 2 to raise for meat.
 
Latest update is that 5 million hectares have been destroyed, Still have had no contact with C in the emergency zone.

Decided to cook the lamb leg for lunch, almost done now that son 3 is home from work.
 
It hits hard when you realise that you know the people who died, I went to school with the family of those who died in Cobargo, what is even worse however, some scammer has already set up a fake funding page for the family.

The Bega valley is a place where everybody knows everybody else, parts of the valley that hold good memories destroyed.
 
Hi Tru thanks for popping by my diary. So sorry to hear about all the losses over there . There seems to be no end to it right now .

on a different note I am glad to find someone here with an air fryer . I will be looking for ideas . I would like to try a chicken in mine .

The losses are incomprehensible, one of my cousins checked in again this morning, currently staying put as evacuating to Bega looks to be no safer than where he is just to the south. Hubby's sister checked in last night, fire 2 km away from the animal rescue farm she is currently taking care of. A friends brother has lost his house. Still no word from C who is elderly but very fit. Have not heard from my favourite Uncle either.

House losses are up over 382 now.

When I air fry a chook, I cut out the spine and butterfly out the chook to maximise air flow, and season with a few spices. Takes around half the time it would in the oven to cook.

The leg of lamb turned out great in the bigger air fryer VERY tender with the meat falling off the bone, I don't have any cold meat for today as some time last night son 3 ate all the left overs, this morning he said "I left you the bone mum" just before leaving for work.

just saw a report on the TV, the NSW fire service has no more capacity to fight the fires, and the fires will do what they want come the weekend when conditions will get worse, going to call sons 1 and 2 to see how they are surviving the smoke (smoke is so bad in Canberra that many of the instruments to record smoke levels are no longer working, with levels in some parts of the city 27 X toxic levels)
 
Canberra yesterday was reported to be having the worst air pollution of any city in the world. I'm sorry your sons are getting that.

Just read up a bit further, and had to smile at your No. 3 son enjoying the leg of lamb so much! Pity about the no leftovers, of course, but it's such a pleasure to see family enjoying their food. :)

All areas in the Bega Valley should expect to be impacted by fire on Saturday, January 4, Incident Controller Superintendent Mark Williams says.

"I implore everyone to have a plan in place," he said.

"All areas should expect fire impact, not just from current fires but new ignitions and spots, which can be active well in advance of current fires.

"Residents need to have a plan and a discussion about where to go. An evacuation centre should not be part of that plan.

"Do not wait for Saturday. If you choose to stay and defend you need to be mentally and physically prepared for an absolutely traumatic event if it comes through like it did on New Years Eve.

Good eating has just gone right out the window, I just want it over and to know if my family and friends are safe, If my finances had been better this year I would have been down there as well at mums graveside.

Finally got a call from son 1, he is struggling with the smoke, his breathing is bad, hubby just gave him some extra advice for sealing their home from smoke, and to borrow a bandanna from his brother as masks have sold out and he has "misplaced his" but he still has to go out to work (Delivery driver), many businesses are closed in Canberra, but he is not lucky enough for that. We have told him to go get medical help if his breathing gets any worse. No 2 son is able to cope with the smoke much better and is currently at work. I never know when the boys are working as it is shift work.
 
That's terrible about the no face-mask - and businesses like hardwares being closed wouldn't help either. (Meaning that any mask would be a help, even if not a proper firefighting one.) Worker safety is much more important than keeping commercial company profits rolling. He could consider just walking off the job if it's not being given adequate protection.

Yes I can imagine how your priorities would really shift in that situation. That's all very terrible.
