Congrats on the desire to lose the weight and keep it off and congrats on your Latina bride!
I agree with Steve on some of his points. I think it sounds like you have been on a starvation diet for the last 9 months and it stands to reason that you will lose weight. You're starving. A man your size needs a lot more than only 1000 calories a day. You're not a bird. Especially since you said you burn about 900 calories in the gym. If my math is right, on those 3 days in the gym, your total caloric intake is 100? I'm surprised you haven't passed out during a workout.
Once the weight comes off to where you want to be, and you start eating normally again, your body will tend to store the calories trying to protect itself from starvation. The weight could possibly come right back on. Unless you're planning on eating only 1000 calories a day for the rest of your life, you might want to rethink how you're losing it. You should be eating more frequently, small meals throughout the day to keep the body going and healthy. There are calculators on this site where you enter your height weight and age to give you a good idea of the number of calories you need per day. Check one of them out and you'll see what I'm talking about.
Achieving the weight loss the right way won't allow you to lose it quite as fast, but it will be consistent and gradual so you won't end up with the loose skin and flab that comes with such a drastic and quick weight loss.
