I need help, don't really know what I am doing.

I am 23 years old. 5'11 and 190 lbs. I used to work out close to a year ago, but never really seen any muscle gains. I would go to the gym 3 times a week and do weight machines for about 40 minutes, and cardio on the elliptical for 30 minutes. I never noticed any muscle nor weight loss. during that time. Surprisingly when i stopped lifting weights and did nothing by cardio, i went from 190 lbs to 175 fairly quickly. I do not know how that happened, but I do know that i started cutting out sugary drinks and only drinking water. Around that time things happened and i stopped working out completely. Last summer and up till now, i gained all my weight back and am now 190 lbs again.

Anyways, thats just a background story. After sitting around and watching tv shows where the characters where physically fit, i got tired of the way my body looked, and kept telling myself that I know i could look the same with enough work. So I renewed my gym membership and ever since last week saturday (the 26th) i have been going to the gym almost everyday.

Last week, my workout routine was as follows.

Monday: Full body workout (chest, arms, shoulders, back, legs, abs), followed by cardio for 15-30 minutes

Tuesday: cardio for 30 minutes

Wednesday: Full Body workout followed by cardio

Thursday: 30 minutes cardio

Friday: full body workout, followed by cardio.

Weekends: off

I started eating better too. watching what i eat, and drinking only water. Using tips from this site and other sites. I keep hearing that full body workouts aren't good, and i also heard that using only machines is not good either (which is what i do). So this week i decided to do it this way.

Mon: Chest/Triceps/Shoulders
Tues: 30 minutes cardio
Wed: Legs
Thurs: cardio
Friday: Biceps, Back, Abs
Weekends: off

Would this be better for me? I also scheduled a personal training session this week, because I want the trainer to show me how to use the free weights (i've always been intimidated by the free weight room, and never know what to do there)

My other question is this. Am what i doing too much? My goal is to get lean and muscular. I feel that I am fat right now and want to drop body fat, but still put on muscle. I have included two pictures of my that I took last week. As you notice, a lot of flab, and i got red lines across my sternum because i'm sitting a lot through out the day (desk job). I also included a couple pictures of my goal and what i want my body to end up like. Hopefully people here can help me out, and tell me what I would need to do.

what are you using to work on muscle building and stability?
 
I use machines. mostly stuff like bicep curl, tricep extention, (that machine where you sit down and push weight down on your sides to work the triceps), chest press, shoulder press, lat pulldown, seated rows, leg extentions, leg press, hamstring raises, crunches for abs.

All on machines though. no free weights
