I feeeeel goood nananaaaana naaa

Here is my recipe for Minestrone.. very simple, I have been eating this for lunch for years... but in the past I would have bagette with lashings of real butter as well LOL

OMG good bread and butter are serious weakness' of mine!!!!!!


Quick Easy Low Cal Minestrone...

2 serves.

½ Onion finely diced - (15)
1 Carrot diced - (25)
1 stick Celery diced - (9)
1 Tomato diced - (16)
½ Capsicum or Pepper diced - (20)
½ cup mushrooms sliced - (10)
½ cup pumpkin diced - (30)
½ cup Cauliflower broken into small pcs - (13)
½ cup Peas - (55) (optional)
baby Spinach leaves (if you have them)

1 teaspoon Smokey Paprika - (6)
1 tablespoon Vegeta (vegetable stock powder) - (6)
(or use liquid Veggie stock and omit water - take note of Calories)

½ teaspoon oil - (20)

2 (or so) cups boiling water

Total Approximate Cals: 215 - 108 per serve

In a pan big enough to hold the finished soup,
saute Onion, Carrot and Celery in the oil on a low heat,
until Onion is transparent and veggies are softening,
add the Tomato and Mushrooms, saute slightly longer, then add
garlic, Paprika and Vegeta powder, saute a few moments until fragrant, then add the Boiling Water and Pumpkin, simmer gently for about 15 minutes,
At which point all the veggies should be tender, add the Cauliflower,
simmer until it is done to your liking (I like it a bit crunchy still) and add the peas
and or spinach if using, and bring back to a simmer, add more water along the way if
it needs it!

Then serve with a garnish of thinly sliced fresh Basil leaves!
 
Congrats Kori, the kg are starting to fly off now. 4kg in 10 days is really good. I don't know how you manage to keep count of all the calories, that would drive me nuts.

As for the Calories, I am actually enjoying it at the moment, finding it fascinating learning how many is in what!!!

Once I have a good handle on it all no doubt I won't be looking up everything like now LOL

Well I made the classic mistake of weighing myself this morning instead of leaving it till the end of the week.. Just can't seem to resist!!! argh!

Anyway.. no loss :( which kind of bummed me.. shouldn't I know but it did.

Last night after dinner I had an Ice Cream - which I think was a mistake, hubby was eating them (2 he had) in front of me and I just couldn't resist..even though I was really still full from my meal! It was only 139 cals and I was only 16 cals over my limit for the day.. but still it felt pretty naughty!

I did make the yummiest Thai Turkey Cakes for dinner though.. man they were delicious! I had two of them, and hubby ended up taking the left over ones to work for lunch today! Dang it!!! Will post the recipe later as they were dead easy too!

Today I feel heavy and a bit lazy for some reason, going to have to really motivate myself to get some exercise in!!!

I hear ya. I try really, really hard not to weigh myself more than once a week because if I don't see a loss, I get down on myself too.

And icecream is such a bitch, but I'm finding lowfat smoothies to be a satisfying alternative.
 
Yeah, like you seen in my journal, I've had the same problems with wanting to weigh myself. I think that if you're gonna weigh yourself you gotta prepare yourself for anything - especially a weight gain. Just so you're not super disappointed.

Well I was very proud of myself just then, I did 20 sit ups, and 18 leg pull ups (couldn't quite do the 20 - there's a mini goal!)

So feeling good that I didn't give in to the lazy mood I woke up in!

currently making home made sweet chilli sauce and it smells devine! I ran out last night as I was making the Thai Cakes.. I am making it myself so I can control what is in it, and make it hotter and less sweet and tastier... plus I get two bottles for basically nothing as I have all the ingredients on hand anyway!!! woo hooo

Ok... Today's Recipe...

Thai Turkey cakes (patties)

or you can make cocktail sized meat balls with the same recipe!

500gm (1lb) 5 star very Lean Turkey Mince (ground meat) - 735 (Chicken can be used in stead, just take note of the Calories)
2 tbspns grated fresh Ginger - 15
3 cloves Garlic - 13
half cup finely chopped fresh Corriander (Cilantro) - 10
Half cup finely chopped fresh Mint - 10
3 shallots (spring onions/scallions) finely chopped - 20
225gm tin Water Chestnuts chopped - 82
2 tbspn Sweet Chilli Sauce - 70
1 tbspn Red Curry Paste - 20
1 tbspn Fish Sauce - 6
juice and grated zest of half a lime
1 tbspn Rice Flour - 60

Total Approximate Calories: 1041 divide by the amount of patties. (7) = 148 each

Mix all ingredients together really well, and then with wet hands form
into small patties or even smaller cocktail balls.

Pan Fry in a non-stick pan until golden brown and cooked through - or bake in medium oven until done.

Serve with Thai Style salad, or Stir Fry Veggies, or with dipping sauce if you want the little cocktail ones.

That recipe sounds great. I'll probably use the chicken instead though. Turkey and I haven't seen eye to eye since I was a kid, which is a shame because I could really use some lean meat variety!
 
I am not a huge fan of turkey (on it's own) either, but in this you can't really taste it at all.. the other flavours are very dominant... but I am sure chicken would work really well too.. You can use fish also, but it tends to get a bit "rubbery" - lack of fat I guess.

If you like Thai food you will enjoy them I'm sure :)

I am an on and off user of this site, but the people here have helped me screw my head on right and I hope they can help you too. Sometimes they have to be cruel to be kind, but I think that works best for me anyhow!

How big are you (if you don't mind sharing)? Because maybe 1500 cals is a tad too little for a person who is looking to lose 50 kg... I eat that amount at my "tiny" 57 kg and still lose and it is nice to have some buffer so that when you stop losing (or you plateau) you can go down a little and with 1500 cals that is not really possible!
I mean of course you gotta do what works for you, and I am by no means an expert (there are some people here who practically are!), but just something to consider maybe.
Your food sounds real yummy! I think I might try some of your recipes once I am back "home" where my mom does not refuse to let me cook (apparently she likes to control the kitchen).

I really enjoyed reading your diary, you seem such a positive fun person! I will most definitely come back and read how you're doing. Have a wonderful time,

Thanks for dropping by! Yeah I am generally a pretty positive person :D

I would rather not say my exact weight yet, but if I get to my ideal weight I will be somewhat "tiny" like you :p I have used some online tools that suggest 1500 is about right for the amount of activity I do (no into exercising hard yet, just pretty light activity - walking etc) When I lose a bit more I will up the exercise I am sure, right now even a 40 minute walk is difficult. Will monitor it, if there is not much action in a week I will have to rethink it, thanks for the suggestion though :)

I hope you get to try the recipes! I will be adding more as I go along, as one of the reasons I am so big now is my Lurrrrrrrrrvvvvve of cooking.. I just have to work at converting a lot of my recipes to low fat/low cal!!!

Last night was a pretty hot and definately tasty Indian Chicken curry.. mmmm and at only 275 cals a serve (not including rice) it was pretty darn light! Not sure if peeps would want a curry recipe or not.
