How many different sets of exercises to do a day?

I am currently doing five, most exercises has me doing three sets of each, it takes me about an hour to do all five properly with two to three minute breaks after each set...is this too much or is this not enough?

Also an unrelated but important question, how many glasses of water should I drink when working out?
 
5x5 for strength if thats what your implying.
You should only take a 1 minute break between sets, but I think thats just me.
