How about this routine?

I was previously thinking of;

Day 1; Weights
Day2; Circuits, abs
Day3; Circuits, legs
Repeat.

But now, how about if I throw in a resting day on lets say "Day4"? Will this effect my results in any way? The main thing I am scared of is the full day of eating calories and carbs, fats, ect. without burning them....
 
You definitely need a rest day in your cycle, I personally would break your "weights" down a bit to your other days (maybe separate upper and lower body or push/pull). I do three full body weight workouts on Monday , Wednesday, Friday and then cardio on Tuesday Thursday, Saturday, plus my half hour walk to and from work Monday to Friday. Sunday I do nothing physical other than grocery shopping, the rest day is as important as the others though for physical and mental health. Gotta remember that there is more to life and the mental health is equally important.

Just eat sensible on your off day if you can, I usually take my girl out for dinner at an East Indian buffet or for Sushi on Sundays and I can always find something reasonably healthy there plus it is damn tasty.
 
After realizing my gruesome body, I've decided to bulk a bit.

However, not bulk on fat, weight. I just want to increase my muscle size, without increase body fat, or anything of the sort.
