i've been on a chili kick recently. i suppose everyone will have to judge whether or not it's on your diet, but it definitely beats anything out of a can taste-wise and likely health-wise. here is my version (today)..
quick market trip this morning and some better-use-today ground beef was on sale so i couldn't pass that up. interesting thing about ground beef i learned recently... this was store-bought and very often when you break up the meat, you find red on the outside & a grayish color on the inside. up until now i've thought the meat dept may have been doing something to artificially color the outside for sale.
fun fact... red meat needs oxygen to stay red. anyone else not know that? ...i didn't.
anyway here are all the fixin's... a few add-ins of my own... med white onion, ... a bit of Rosemary and a few peppers from the garden... and some canned chili peppers that i needed to use up. Roma tomatoes were on sale today and they are meaty... nothing wrong with that.
before prep....
~15 minutes later (drain the beans)....
have a big pot ready, but start by browning the beef....
drain the fat and throw the browned meat in the pot. i used to eventually return it to the pan, but i figure why waste any of the mix, so i throw that on top of the meat in the pot and add about a half cup of beef stock just to keep things moist.
onions and peppers into the frying pan to saute a bit...
throw the canned chilies and tomatoes just to heat things up a little...
now throw everything else into the pot.... simmer for about 15 minutes...
i started this whole project at about 11:45....
12:30 ... breakfast...!
for less than an hour's work... easily 6-7 meals.
