Fat Loss? Matabolism questions

Well i used to be 5'11 275 back in January. Im curently at about 230. I used the low carb hight potein diet and dropped about 40 lbs. i used whey protein and worked out. I currently want to get to 200. I work out about an hour a day with freeweights and machines (bench press, incline, decline, millitary & etc.) I take whey protein in the morning and in the afternoon and I eat a lot of meat. I am also on the low carb high protein diet. My biggest concern is my matabolism. Is it slow or fast or will this workout plan slow it down or whats going on.. I also do pushups, pullups and situps about 3-4 times a week in sets. My goal is 10 pounds a month. Is it possible with what i have listed?
