Diary of a "sick" girl

Well, yesterday was a good day. For dinner I had a small grilled marinated flat iron steak , 3/4 cup of 3 bean soup and broccoli.
I got up this morning and was down close to a pound. I know there is no way I lost that kind of weight. Most of that is probably water.
I'm actually having breakfast today. While I don't feel hungry in the morning I do like breakfast foods and I often have them for dinner.
I got Dunking donuts for breakfast.
MY usual order is Coffee with skim milk and splenda, A Sausage egg and cheese english muffun(490 cal) and hash browns (200 cals)
Today I had my usual coffee and a ham egg and cheese engligh muffin which is 350 calories. I skipped the hashbrowns. I had that with some cantelope I cut up. A lowfat dinner is going to be tough tonight with very little food in the house.

OH and I have to tell someone this as my husband is not home. I swear I am not making this up I just walked into the kitchen. No one was in there before me,and my cat was wearing an orange, French apron. An apron. MY cat was wearing an apron

Here is my dinnermenu plan for the next week

1 Quinoa Stuffed Peppers
2 Chicken breasts in a basamic vinegar reduction
3 Pork loin on the grill grilled
4 Tuna w Mango Salsa
5 Going on a picnic
6 buffalo chicken wrap w feta
7 baked eggplant parmesan

I'm sitting here waiting for my groceries to arrive. I have Lots of good healthy things coming and no junk. Not even the one bag of chips I often allow myself

I've spent a big chunk of my day talking with my son about the military. He's 16 and this is something he's been considering for a long time. I think he has decided to follow in his Mom and Dad's footsteps and join the Marines. He still has a year before he can legally join.
Meals today.
Bown Kashi Go lean cereal w 1 % milk and cantalope.
Turkey Beast on pita bread with hummus, laughing cow cheese and jalapenos.
I've also had some yogurt and may have something else after the groceries come

Hey Jenny!

I love your diary, you are incredible. I know people with less severe diseases than yours who just give up and get consumed with bitterness. - your get up and go is amazing. I like the sound of the foods you have planned. How do you do a balsamic reduction? I like the sound of that.

I just noticed that thing about your cat in an orange french apron. was that a hallucination? or, was your cat actually wearing an orange french apron?

He was wearing an apron. It hangs on a peg next to the basement door. The cat jumps up on the little table that stands there to try to open the door. He must have somehow pulled the apron down onto himself. I walked in there and he was just standing with the apron hanging down to the floor.
Now if only he could cook
ETA, I just discovered that Weight Watchers Amaretto Cheesecake flavored yogurt is great.

I was a cook in the Marines and we were taught how to cook by "railroading"' which meant that you pretty much drop the recipe and cook to taste. I tend to "railroad"everything I cook.
As such, this is the closest to what I do

If I wasn't watching what I eat I would add butter. I usually do this with the pan drippings.

Or, at the very least, do the dishes. I trained my dog to rinse the dishes...I put them on the floor and she licks them clean. No need to pre-wash...lol!

I'm really not looking forward to today. I'm going on a picnic with my mother and an old family friend. Family friend and I don't see eye to eye on a lot of things, but she was very good to me when my husband was sick.
We are having BBQ chicken, twice baked potatoes, spinach dip and brownies. I'm sure there will be more fattening things to add to this list . Hopefully I can just graze.

I was good. I had one pice of BBQ chicken but it was a leg thigh combo. I had one twice baked potato, which was just the half of one. IT had no cheese or bacon in it. I didn't even taste the spinach dip. I had one small brownie and that was only because my mother made them and it would have been rude for me not too
Tonight I had a quick dinner, pita bread with Laughing Cow cheese, spicy Hummus and turkey breast. I really like using hummus instead of mayo. I would have put jalapenos on there but the store forgot to bring them. I also snack on some raspberries and strawberries today and had a half a Fiber One bar.
I have a Kashi meal in my freezer but I wonder if it's any good. Usually I do a much better job doing my own cooking and don't buy frozen meals

I also like hummus instead of mayo, it makes a sandwich more satisfying. Good job not overeating bbq chicken, thats a hard thing to contol youself on (especially brownies...).

Hi!

Just stopping by to say hi and also to congratulate you on not giving into those yummy temptations.

I was tempted to get a slice of pizza while at COSTCO, and I didn't. I feel good! heheheh :)

Anyways, keep it up! =)

I haven't posted in a couple of days. I've been busy. My daughter came home on Friday from the summer at her Dads. My husband came home last night and brought our friend with him. He just left so life should settle down now. Last night I made a nice baked eggplant parmesan. I used egg beaters and bread crumbs. I spray the eggplant with Pam and bake it in the oven, then I put it in the crock pot with some homemade sauce and yes, full fat cheese. Not the ost diet conscious meal, but that did cut a lot of calories and fat.
Our friend bought a dozen donuts this morning and I did have one 230 calorie donut. I should still be able to stay in an acceptable calorie range.

Yes! I've lost a pound. I didn't bother to weight myself as it was a bad time. Weighed myself this morning and I'm now .3 from a healthy BMI
