So you have mentioned champagne and your like for it a couple of times ;) I also know you work in the wine business right? So I am going to a wedding soon and they are talking about getting some kind of Italian champagne or a champagne-a-like - do you know anything about this and whether it's good? Thanks :)

The only good champagne is real Champagne form France--but the cheapest is $29.99 bottle, usually. Bummer! Italian sparklers, I don't know if they're good--I think "Cava" is Italian, and it's usually cheap and it tastes better than cheap American sparklers...but nothing beats the French! It's the cold climate ang high lattitudes, and their special technique pioneered by Madame Cliquot and the monk Dom Periognon.
 
Hmmmm, South Beach, eh? I'll search the net for Ricotta recipes. The plain stuff is...so plain. Yeah! It almost makes me gag :p

Dessert – Lemon Peel Ricotta Crème
½ cup ricotta cheese
¼ teaspoon grated lemon peel
¼ teaspoon vanilla extract
1 package sugar substitute

Mix the ricotta cheese, lemon peel, vanilla extract, and sugar substitute. Serve chilled. Serves 1.


Cinnamon Ricotta Creme
serves 2
1 cup ricotta cheese
1 tsp vanilla extract
1 tsp cinnamon
2 pkts Splenda

Blend in the blender until smooth. Chill.[/FONT]


Vanilla Ricotta Cheesecake
2 cups ricotta cheese
3 packets Splenda
1 tsp vanilla extract
1/2 vanilla bean - scrape out
2 eggs

Mix well, pour into 4 ramekins, bake in 350 oven for 20 minutes[/FONT]


Mocha Ricotta Creme

INGREDIENTS
1/2 cup part-skim ricotta cheese
1/2 teaspoon unsweetened cocoa powder
1/4 teaspoon vanilla extract
1 packet sugar substitute
Dash espresso powder
5 mini chocolate chips
DIRECTIONS
Mix together the ricotta, cocoa powder, vanilla extract, and sugar substitute in a dessert bowl. Serve chilled with a dusting of espresso powder and sprinkled with the mini chocolate chips.

Pumpkin Spice Ricotta Creme
INGREDIENTS
1 cup part-skim ricotta cheese
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1/2 teaspoon ground dried ginger
2 (1 gram) packets sugar substitute
DIRECTIONS
Mix together all the ingredients and chill. Scoop into dessert bowls or hollowed-out mini-pumpkins and serve.
 
the cheesecake one is especially good - italian cheesecake is a lot lighter than new york style cheesecake which is made from cream cheese but it's still yummy good
 
Cute Clothes

I ordered some cute clothes today, for summer, in aspirations of my thin-ness. Even so, I can wear them now.

Cute sandals, 4 1/2 inch heels: I actually received them today, in RED:


Cute Boy-short bathing suit, in RED: The model is incredibly skinny, but that's to be expected--and when I have a BMI of 20.4 or so, I shall look just dandy:


And these "smocked waist pant" in WHITE, to wear on the way to the beach:


SO I'm pretty excited about summer and beach time!!! Now I need a tan...

Thanks for the info :) I tried to look it up because they gave it a specific name. I found one I think it might be Prosecco? Apparently it's used to make the Bellini. I know you are a champagne purist though :D
 
cute shoes! i just bought a pair of brown wedge heels on Saturday. I liked the swimsuit too, but the model looked sickly! You'll look much better in it.
 
Yesterday I Rocked

Yesterday I did extremely well, I thought--check out what I ate:

Berry wafflewich (2 waffles with strawberries and blueberries and almond butter); chocolate soymilk

Ricotta cheese on crackers with fresh basil and tomato slices

Tofu sandwich on sprouted grain bread with all the fixins I like, including lots of Romaine lettuce and pea sprouts

1 180 cal dark chocolate bar over the course of the day

snack of blackberries and vanilla soy yogurt

dinner at my fav Thai restautant: Pad Talay, which is a stir-fry veggie dish with muscles, shallots, squid, snapper, and prawns.

1920 calories, no alcohol, not too much salt of caffeine, AND:

Walk to beach with doggie for 35 minutes; intense HIIT Kick-boe class with Psycho Michael for an hour and 15 minutes, and 2 hours of housework, vacuuming, laundry and making the bed.

So I burned an aweful lot of calories. Tomorrow I start my period, and I weighed a svelte 142.5 lbs this morning :D

But today I'm a bit crabby--surprisingly, I'm NOT bloated :eek: I like that! Well, I'll just take it easy. One issue I had though was I did not sleep as long as I would have liked--probably about 6 1/2 hours. Sigh!

Today is FOGGY outside. I hate that! Oh well!

Time to check out other people's diaries...
 
I have never tried chocolate soymilk. I am really not keen on the regular soymilk although I am sure anything with chocolate in it is probably pretty darn good!
 
Looking forward to eating

So I mentioned this a couple times in a few diaries, better put it here:

I ABSOLUELY AM LOOKING FORWARD TO EATING HEARTILY AGAIN, ONCE I REACH MY GOAL AND EAT TO MAINTAIN MY WEIGHT

For a 130 lb woman at 5'7" at age 25 or so, at MY activity level, that's about 2000-2300 calories a day, depending on what I'm doing (rest days probaby 2000, weight days 2300, and cardio days 2100-2200 weekly I'm guessing).

MMmmmmmmmmmmmmmmmmmh!

That's about 4-5 meals a day at 575-460 calories each for 2300 calories!

I'm hungry just thinking about it!

I sure hate dieting, even though I eat often and really healthily (mostly), my body still says, "Eat MORE! I don't want to burn this fat, dammit!" My body wants me to maintain my current weight. According to several charts on the web I am in the "ideal" weight range--which is about 132-144. I figure at this point my body's going to be somewhat resistent to weight loss. That's ok--weight training is my secret weapon.

This reminds me I have to ask Steve a question...
