Depends what you like, and are you doing one whole meal? Or a bunch of small things?
My favorite thing to make lately is pepper steak, and I throw it in the crockpot so there's no real cooking involved. Thinly sliced steak, red and green peppers, sliced onion, soya sauce, some water, pepper, a pinch of salt a pinch of sugar. I serve it over either rice or egg noodles.
I'm going to attempt pretzel-crusted chicken breasts tomorrow night, using low-fat pretzels. I'll let you know how they are!
My favorite hors d'ouvre (don't know how to spell that

) is a cheesy bacon dip, that you can make a little healthier. Low-fat bacon, a package of low-fat cream cheese, a little fat free mayo, onion, and a cup or so of low-fat cheddar. fry the bacon and onion. Mix it all together and throw it in the oven in a covered dish for a while. Serve it with baked nachos. Can you say 'YUMMY'?
