a Hillbilly diary

love clam chowdah. anyone have a healthy recipe????? I like the white kind, New England.....not the red, Manhattan.

The liquid smoke in this one is an odd ingredient but it kinda takes the place of the salt pork it's normally started with.....

2 (6 1/2-ounce) cans minced clams (with juices)
2 1/2 cups peeled and finely chopped potatoes
1 cup chopped onions
1 teaspoon instant chicken bouillon granules
1 teaspoon Worcestershire sauce
1/4 teaspoon dried thyme
1/8 teaspoon ground black pepper
1 1/2 cups reduced fat milk
3 tablespoons cornstarch
1 1/2 cups evaporated skim milk
1/4 teaspoon liquid smoke
Drain the clams, reserving the juices. If necessary, add enough water to the clam juice to make 1 cup. In a medium saucepan, combine the juice mixture, potatoes, onions, bouillon granules, Worcestershire sauce, thyme and black pepper. Bring to a boil, then reduce the heat. Cover and simmer about 5 minutes or until the potatoes are tender. Using the back of a fork, slightly mash the potatoes against the side of the saucepan. In a small bowl, stir together the milk and cornstarch. Add the cornstarch mixture, evaporated skim milk and liquid smoke to the potato mixture. Cook and stir until slightly thickened and bubbly. Stir in the clams. Return to a boil, then reduce the heat. Cook for 1 minute, stirring frequently.

well today wasn't bad except for having no breakfast or lunch. New machines at the school on the fritz so just grabbed a baked potato once I finally got home. I had some Chinese and a small mocha frappé so not sure of all the calories but without breakfast and lunch I'm not overly worried other than I just really need to plan ahead a little better.

Eeek! There you go again!!
Missing breakfast NOW lunch?

You're going to put too much stress on Maleficent and my heart!

it was one of those weird days. was running late so was gonna just grab a pop tart or such out of the machines and it was broken.... the water machine was empty. The only thing working was the coke machine and I haven't had one in over four months so wasn't about to start now. Where the built the new school there just isn't much around so it was basically nothing till about 3 pm. well I'm home tomorrow so I'll get a breakfast in nice and early.

aw happy thanks and nice to see ya.....

well today is two pounds down. I'm getting closer and closer to the half way mark which is about 102.5 pounds. In a few months I should be out of these dreaded 3's and start to embark into 2's country. Though I will be on top of the hill it will still be nice to get there.
I get alot of inspiration from people here. One of the biggest is Miss. M her love of walking got me out to buy a pair of walking shoes so I'm gonna give that a try for awhile. Just been waiting for some of the heat to get out of here. I haven't had any breakfast yet so I think I'm going to head to the coffee shop and pick up an espresso and a muffin of some sort. oh and in the words of miss. jelly......" Don't forget to drink your water."

Ms. pequin I'm sure I will. I will go for a short stroll later tonight or maybe tomorrow.

Well today is going to be one of those mystery days as far as calories go. The coffee and muffin for breakfast will bit a mystery because I didn't make it.
The Barbecue sandwich for lunch will my a mystery because I didn't make it. The only thing I think I'll be able to come close to will be the baked chicken leg quarter. It's one of the ones from the store that already have the dry barbecue seasoning sprinkled on but I normally wash that stuff off. It's tends to be a little sweet for my taste. I might do a baked potato with butter and sour cream with it. I don't think I'll go above my calories but it will be way up there in the clouds someplace lol.......

This is one of those approximate days……

oooh fruit loops... yum... the sugar in them won't affect you?

I saw inthe grocery store, there are now fruit flavored cheerios... they looked interesting..

well I have been eating sugar here and there and no bad results to speak of just yet. I don't have the major cravings but that one would have quite a bit of sugar so thats why it is still in the thinking stages. I have tried the different Cheerios and I think I like them the best, they just aren't in the house........

Get Froot Loops with less sugar!!

:) Hi! You know they have Froot Loops with 1/3 less sugar? I've tried them and can't tell the difference(other than price!)! Froot Loops have always been my favorite since I was very little. Now for dieting purposes I have Honey Comb! I can't stay away from kid cerearls!!!

yea I have seen those. The cereal here for the kids is normally what I eat and this week was froot loops lol. I'll be shopping tomorrow and probably pick something up for myself. The calories; being such a big guy wont bother my diet but do I really want that much sugar at once? It's on my food list but I may or may-not have it. Might replace it with an extra baked potato later on tonight. That's the thing about listing all your foods early in the day. It gives you a chance to evaluate everything you are planning to eat.
