Hey lee,

Frozen fruit is a great idea! I always run out of fruit and veggies too. I have to go atleast once a week for more.

So how's school going???
 
Ms. kallie its going pretty well. I have discovered an engineering coarse(computers and electronics) isn't what someone should look into if they hate math lol. Its not bad though, after your college math 1,2 and physics the math you use for the electronics is pretty much basic math. Its just all the formulas, multiply this but not before you add this then don't forget to divide this before you translate the whole thing to binary lol. I would really love to get my bachelors degree after this two years but they don't offer it in my field in the Texas schools. If I can work in anther state then I can go there. ITT tech has a great program and I love it but they are on a different accrediting system so other schools most of the time will give you credit for their courses but its a fight. I wont really need a bachelors because these kinda of business will train you on their equipment so after school most places look more for experience rather than what degree you have.

Lunch: Made some healthier fried rice. I'm not too much worried about the calorie count. It was brown rice,1egg, sir fry veggies, some pepper flakes and soy sauce.{150+70+100+30}

Dinner: Lean Gourmet- meatloaf and mashed potatoes
(210 calories)

Snack: 2 servings of raisin bran + 1 banana+ 2% milk{400+121+130}
(651 calories)

Drinks: bottle of orange juice, water
(210 calories)

Total: 1581 calories {sweet}
 
yea the fresh fruit runs out so fast. Since I'm on disability and get paid at the end of the month it just never seems to last. this way i will always have fruits and berries it will just be in a frozen form.
 
Well today was a good day. I had more bread than I like but I made sure I stayed away from the white starches that make me crave sugar so. I'll have to go shopping this weekend the good for you food is getting kinda thin. Tonight was almost deep fried chicken nuggets and fries. Of coarse I didn't but the thought was there. anyhow the damage today wasn't bad. I had to guess on the bowl of chili but its always hard when you make something compared to reading whats on the package.

Breakfast: Breakfast sandwich/ 1 fried eggs {0 calorie cooking spray}, 2 pieces of turkey bacon, and 2 slices of wheat bread. {70+35+35+70+70}
(280 calories)

Lunch: Bowl of homemade turkey chili. 3 slices of wheat bread
(210 calories + what was in the bowl of chili.

Dinner: salad with lettuce onion and light ranch + 2 slices of turkey bacon {24+13+160+35+35}
(267 calories)

Snack: Snack: 2 servings of raisin bran + 1 banana+ 2% milk {400+121+130}
(651 calories)

Drinks: water
(0 calories)

Total: 1408 calories + the chili

I’m not sure about the calories in the chili. Seeing as there was no fat added and everything else was relatively low I wouldn't expect too many. I think it’s safe to assume that I’m way under my 2000-2500 calories
 
ya had a good day, son... :D chili....mmmmm.... Texas home made chili... doulbe yum... a few years back I was stuck at a customer site for a bunch of weeks somewhere between san antonie and houston... in the middle of no where... i found me a chili cook off contest about 10 minutes from where i was... they allowed for lots of tasting... and some of the competitors didn't think a yankee girl could handle the heat... I showed 'em though :) good stuff...
 
I have it posted in the recipe section. I think I mention putting oil in it but this time I cooked it without and it did just fine.

I can't give exact amounts just because I don't cook that way but Ill try not to lose ya....

1 package of ground turkey meat( try to stay away from the nasty stuff in the tube)
2 cloves of garlic
1 large red onion
grind you up a blend of Spanish spices you like. I like a blend of cumin,coriander,salt,pepper,red pepper flakes.
1 can of diced tomatoes
2 cans of tomato sauce
1 large fresh tomato
2 cans of ranch style beans
2 Tbsp of a good oil if you diet permits
2 jalapeños just to put in the pot to make the whole thing happy
1 small container of a good chili powder(darker the better)
(as you can tell I'm use to feeding an army)

chili is a Texas food of love thing so you wont get it wrong just do what feels right...

Start with a large pot on mediumish. Add the oil(it will keep the turkey from getting too much of a char on it) add the cut up red onion and cook till it gets soft. add the turkey meat and cook till its done. you can tell because it will turn into a whitish color. add your chopped garlic, Mexican spices and The chili power. (I normally put in the garlic at this stage because it keeps it off the direct heat and it doesn't seem as bitter) stir the chili powder in good and then add your cans of tomatoes and sauces and the fresh tomatoes. Next add your cans of ranch style beans and the juice in the can.( you can leave out the beans if your a purest and would rather just have the meat chili) put in two jalapeños to bring up the heat. If you char them on the burner first it adds a great flavor to the mix. use one of the cans to add a couple cans of water till the mix thins out. put the burner on simmer and simmer till it gets to the thickness you like. You can add more If you like chili soup.

This isn't strictly a low calorie recipe but its better than the full calorie one made from beef.
 
I love chili really hot. since I make it here i have to tone it down a bit. I went up north and I had some chili, Made me really miss the chili from down here lol.
 
Hey.... can I have your recipe for chili made with turkey? My husband is a turkey fanatic and loves everything hot! :)
 
hey hf.... sure no problem. I have it in the recipe section but if you scroll up here in my diary I think its post #470. I add some oil sometimes but if you cant have it just leave that step out.
 
i feel kind of dumb... i just saw the recipe you posted in your diary like 8 comments above mine.. haha.. oh well, thanks. It looks really good. :)
