2B135again Diary

Hello everyone and my new teammates,

Thanks for the drive-by intros. I'll stop by your diaries today some time (hopefully). This has been an insane weekend for me. I was in a car accident Friday evening. It wasn't my fault, thank goodness. I'm a little sore but fine, but my car will need some work. I spent most of Saturday getting estimates, grocery shopping and cooking for a group of friends who arrived Saturday evening from the east coast. I went for a long 1-1/2 hour bike ride yesterday morning before everyone got up, and had planned to post here after that, but they were awake when I got back.

Since my willpower doesn't seem to be really strong yet, I sneakily planned some really healthy meals and snacks. I bought chips, but also have piles of pre-cut veggies and low-fat dips, and I made hummus so I don't have to feel guilty joining in the snack fest. Breakfast was a frittata with broccoli, mushrooms, green onions, chopped tomatoes, a little ham, spices and 7-grain bread for toast. No one said a word about how healthy it was, just that they thought it was gourmet! Scambled eggs with veggies?! I packed veggies, lean lunch meat, low-fat cheese and nuts for snacks during the day while we hiked and walked all over the Flatirons. We ate out for dinner yesterday (I had salmon-Yay, Donna! *patting myself on back*), and I'm planning a 40-clove garlic roasted chicken with veggies for dinner so I should be safe. And of course, every meal will be accompanied by a big salad. Whew!

I hear stirring in the other room so I'm going to say hello quickly to my teammates and then see if someone wants to go for a walk before the rest wake up.
 
Sorry to hear about the accident. Glad you are doing ok. Can be really tough dealing with all the drama that entails & resisting the urge to just grab the quick convenient comfort food. The chicken sounds yummy though! Good luck with your day, the challenge & that walk.

Hey, I'm sorry to hear about the accident, and I'm glad you're ok. Thanks for dropping by our diaries despite everything. I hope the repairs won't cost too much. When I drove my car into a wall, I was told the repairs would cost £300. Needless to say, my car still has that dent in it. It adds character, I think.

Your meals sound AMAZING! Seriously, I'm drooling at the keyboard. I love healthy "gourmet" breakfasts, and I love garlic roasted chicken. Wouldn't I like to come round to yours today ;)
 
OK, ready for a really good day today. Surprisingly, I had very few leftovers from my guests this weekend so I went shopping a filled the cart with salad, vegetables, more chicken, shrimp and a couple of pork chops that were screaming at me as I tried to walk by. I spent a while last night cooking some basics for the week.

I grilled several chicken breasts and then cooked a couple more in some shallots, tarragon and white wine. I blanched and peeled some tomatoes, threw them in the food processor with several cloves of garlic, some fresh oregano, a little onion and a couple mushrooms and made my own spaghetti sauce. I forgot salt, but the sauce tasted great without it so I'm glad I did cause I sure don't need it. I haven't cooked my own sauce in a long time (my Italian grandma would be so disappointed in me) and it was soooo yummy. I bought a spaghetti squash and cooked it, too, so I'll have a couple of nice healthy meals out of that.

I froze a few of the chicken breasts I cooked for later in the week, but I really want to be sure I have things already prepared or I'm gonna go careening into a McDonald's on the way home from work.

Almost 50 oz of water down already! Oatmeal with apple juice soaked cranberries for breakfast, big bunch of juicy grapes for my snack. Long walk planned for lunch.

On track to kick Halloween Challenge butt!
 
Go you! I find that if we have junk food in the house, it takes SUCH an effort not to eat it. So you made a really wise choice in buying all those healthy foods. And stay full so you're not tempted by MacDonalds. Just think of all those fingernails and bits of hair that people have found in their burgers!
 
Oh Faith! Fingernails? That picture in my head will definitely keep me from craving McD's for a while. Blechhhh! I have Supersize Me on DVD I think I'll watch it again. You guys are all really good for my will power, and Faith, you're welcome to come for dinner any time. If any of you are in the Denver area, let me know. I'll make us something good and healthy! I love company!

Have any of you ever eaten amaranth? It's a small grain that looks like grits when it's cooked, but it's got a little nutty taste and it's so good for you. I'm trying to experiment with some healthy alternatives to rice and potatoes, and amaranth and quinuoa are definite keepers. They absorb the flavor of whatever you're cooking them in so if you cook them with a little stock or tomatoes, delish! And they're loaded with fiber! (Another unsavory picture in your head for so early in the morning ;).)

I had oatmeal with cranberries again this morning since I forgot to bring my breakfast burritos I made. Darn! I didn't just forget them, I left them sitting on the counter so I'll have to throw them away now. I hope my cats don't get into them. One of my cats has serious food allergies so he can't eat anything but organic cat food. Anything with artificial colors or flavors that goes in, is immediately returned to me (with interest, it usually seems). Poor baby. He can't even eat a bite of table scraps. He makes up for his hurling with the sweetest personality ever, though.

Time to get back to work. Stay motivated everyone!
 
Whewwww, you sound so full of energy today, it's great!! I must say those grain like grits sounds fabulous!! I love anything like that!! And let's see I'm about 5-6 hours I think from Colorado. LOL LOL, my hubby grew up in Denver, and of course his favorite NFL team (Denver Broncos) of course. LOL LOL Well, I sure hope the rest of your day is a GrEaT one!!! :rofl::D

You know I'm an east coast transplant so I'm actually a Ravens fan, but I don't say that too loudly around my Fantasy Football friends. You're right I have a ton of energy today and I don't know why. Do you think this eating right and exercise might be doing it? :D It's crazy how different I feel after only a few days of doing things right.

Can you tell I don't have the slightest desire to do actual work at work today? I'll try to get by a few of your diaries today if I get a chance. You've been so supportive of me.
 
I agree with Miss LadyBug, you sound like you are just bounding with energy in the words you have used. At least it comes across like you do *L* Good job kicking the Halloween Challenge bootay!

Do you think this eating right and exercise might be doing it? :D It's crazy how different I feel after only a few days of doing things right.

Can you tell I don't have the slightest desire to do actual work at work today? I'll try to get by a few of your diaries today if I get a chance. You've been so supportive of me.

Good thing I found that energy, because it's been just crazy the past few days. I've still stayed on my diet plan and exercised almost every day, so I'm down 3 lbs this week!! I'm so happy I can't stand myself! My counterpart from our Mexico office was just hired and is here this week for training so I'm still a little wacky but happy and very encouraged that I was able to stick to my diet through this. It would have been so easy to slide into a fast food place and justify it because of my schedule. Having the food already prepared at home was the key. I just have to make sure I allow for time to cook over the weekend so I can keep myself on my diet.
 
Sounds like you're doing really well, Donna! I'm telling ya--when I exercise, it makes me feel so good. I, too have lots more energy and feel so good about myself.

Glad to have a "gourmet" cook on our team. Chef, who seems to have gone AWOL (I think he's really busy at work), makes some fantastic stuff, too. And Bmohearn is studing to be a chef. Maybe you three could have a healthy cook off, and we could all be the lucky tasters/judges...sounds like a plan to me...:jump::jump:
