pasta primavera..
3 ounces whole grain linguine, cooked according to package directions
1 cup fresh chopped broccoli
1/3 cup shredded carrots
1 cup julienned zucchini
2 large ripe Roma tomatoes, chopped (you could use canned or the pomi boxed tomatoes), but fresh is always better_
1 tsp. olive oil
3 cloves garlic, minced
1/4 cup fresh flat leaf parsley, chopped
1/4 cup fresh basil, chopped
1/4 tsp. pepper
1/4 tsp. thyme
1/2 tsp. oregano
Pinch of red pepper flakes
2 - 3tbs parmesan cheese, fresh grated
Cook pasta while pasta is cooking, make sauce
In a pan, add the oil, with garlic and sautee. Add veggies and stir until crispy tender for at least 2 1/2 to 3 1/2 minutes.
Add the tomatoes, herbs
Simmer for a minute or two until the tomatoes are tender, but remain somewhat firm.
Add the sauce to the spaghetti and add the grated Parmesan cheese. Toss and serve immediately.
