Tuna!

I liked tuna when I wasn't a vegetarian.

There's a delicious, low-calorie, low-fat recipe that I found somewhere online...

Get a can of tuna, any kind you like. Albacore, or just the regular ol' tuna in water. Drain the water and place into a bowl. Add about a tablespoon of mustard. Mix until evenly distributed. Add a quarter cup diced onion and a quarter cup diced celery, or however much you like. Add salt and pepper to taste.

Put it on top of some romaine lettuce leaves and enjoy!
 
I enjoy solid white albacore with some pickle relish and jalapeno slices all mixed up in a bowl. Not a big fan of mayo in any form. Honestly, I like tuna straight from the can.

I've never had the tuna in oil though. Just water.
 
the mecury in tuna is directly related to the size of the fish itself. Big fish=more mercury, small fish=less mercury. Chunk lite tuna is made from sxmaller fish and has less mercury than chunk white, cost less too.
 
take whole wheat noodles of your choice;
tuna;
diced pickles, onions, celery and hard boiled eggs; and
low fat or fat free mayo.

mix it all up.

and you got...

tuna salad!
 
Simple (and maybe boring if you eat it too much), 1 can tuna, preferably albacore, 3-4 tbsp sweet relish, 1 tbsp miracle whip light mayo. Eat it on crackers or whole wheat bread!
 
Tuna is also low in fat and calories therefore it is a great substitute for meats and dairy products that are higher in saturated fats and trans-fatty acids. Avoid oil-packed tuna to keep your fat intake down.
 
Crackin Recipe....

250g (1 1/4 cups) long-grain rice (ive tried multi time to make with brown rice / canadian wild rice, i havent cracked it yet)
600g chicken thigh fillets, coarsely chopped / equivalent of tuna or mashed mixed beans
3 green shallots, ends trimmed, coarsely chopped
1 garlic clove, peeled
1 egg
2 tbs fresh lemon juice
8 large silver beet leaves, washed, dried


Cook the rice . Drain.

Meanwhile, place the chicken (or tuna / chickpeas ect), shallot, garlic, egg and lemon juice in the bowl of a food processor and process until finely chopped (can do manually). Season with salt and pepper.

Use a sharp knife to remove the thickest part of the stems from the silver beet leaves. Divide the chicken / tuna / lentil mixture into 8 portions. Place 1 silver beet leaf on a clean work surface. Spoon 1 portion of chicken / tuna / lentil mixture along the centre of the silver beet leaf. Fold in ends and roll up firmly to enclose the filling. Repeat with the remaining silver beet leaves and chicken / tuna / lentil mixture to make 8 rolls.

Place the rolls, seam-side down, in bamboo steamer over a pan of simmering water. Cook for 4-5 minutes or until bright green and cooked through. Slice.

Serve with a cracking healthy sauce of your choice / fresh veg! oh YEA!
 
** oh yea, skip the season with salt (esp if you hover near the req daily intake - always better to flavour with fresh herbs than nasty ol salt aye)
