Squats and Lunges

No, leg curls are hamstring exercises. Squats and lunges are primarily quad dominant. The best ham exercise I've ever found is the deadlift, and it's many variations, like straight legged deadlifts.

Still, squats>lunges>leg extensions.
 
leg extensions are crap, and usually damage more knees than squats. leg extensions should be light, and be for nothing more than a warmup for heavy squats (if even that).
