I can't really answer your above question though as each of us have different starting points and different genetics.

To give you an idea though, I've been lifting seriously longer than I've been driving a car.

if you're not willing to even put the effort in to get your question asked... you're going to have a tough time looking like Steve :D

I'm not really sure how to answer your question, assuming this is the question you have:

I mean, honestly, it's been a lot of work. I'm not blessed with the best genetics in the world though so it's been tough for me to put on the kind of size I have.

Once you lose the weight, adding muscle may come much easier for you. It's a matter of individuality.

If I could say one thing: CONSISTENCY

To get into specifics would take an entire book though. So if you want to start with what you have planne we can go from there.
 
Awesome gym!

I can only do chin-ups and dips w/the assist machine but I have seen that depending on the day, I can crank out a whole 1/2 chin up and do one dip w/o the assist...

My goal is to get to 1 chin-up and 2 dips w/o feeling like I am going to break my arms..

Such modest goals :)
