My Journey 2015: This Time Stronger and Smarter!

Good job on getting the weight down. Excitement can definitely keep you going to see where it can take you. I know you'll achieve the goals you seek one day. Keep doing what you're doing because it's working for you! Sounds like a tough diet to be on, but I'm sure you'll manage. Headaches can be expected, but you'll power through. They'll subside. Hang in there, keep pushing.
 
SLICK - talking to the other people in the group I'm in, it sounds what I'm seeing for weight loss is most likely fluid loss from inflammation that I have. This is a very good thing! Hopefully that means the inflammation issues I'm dealing with are starting to heal up. :)

I'm not `100% convinced I made the zoodles right. They were still kind of hard. I'm wondering if I didn't cook them long enough now. Are they supposed to be soft (for lack of a better) like normal angel hair pasta?

DUDE - I was actually much closer to my goal early last year. I did break the 200lb barrier, but I relapsed. Recent research has opened my eyes to a new way of eating and so far it's working great. This won't be a diet for me. It's going to be a lifestyle change. It has to be or won't work. I am very excited to see results and I'm 100% sticking with it this time. :)

So, today's weigh in was 217.8lb. Down another .6lb. Last night's dinner was so yummy. The best meal I made all week trying these new recipes. I made lemon roasted chicken thighs and had it with a veggie roast of carrots and broccoli. I'm not a fan of broccoli, but I think the bacon that I added to it pushed me over the edge. It was so good!

This "diet" that I'm on actually has me eating fattier foods, frequently. Stuff like red meat and even bacon can be eaten on a regular basis. From what everyone says, it's not the "fat" in foods like this that makes us fat, it's how it's cooked and of course everything else we eat. So by cooking meats in coconut oil or olive oil instead of butter, it's a healthier fat source. We'll see what my blood work says. I'm thinking I'll go for a physical (which I HATE doing - my last was about 4 years ago) in about 6 months to check my levels.
 
It's a great feeling to see the scales going down Mandy & seeing & feeling inflammation go down would be even better. At the moment, I am aching all over (Osteo though, thank goodness) from our change in the weather. I feel for you & don't want to imagine how much RA must hurt! I'm actually "lucky" (if you want to call it that) that my medication does a very good job at masking the pain. Before going on meds I was in very bad pain. I could hardly move, but with the meds I'm able to do just about anything with minimal discomfort. When it's too cold outside I do get pretty achy, mainly in my ankles and knees which makes working out difficult, but I try to do it as much as I can. I'm looking forward to spring that's for sure.

Morning weigh in was 217lb even. That's exactly 5lb less than Monday morning. Pretty psyched about it. I was kind of hoping the 1-2lb+ trend would continue for a bit, but then again I don't want to lose TOO quickly and wind up in trouble so I'll take this pace with no complaints. :)

I made an awesome discovery last night. With this new diet there is no dairy at all allowed. Last night while looking around I found several non-dairy ice cream recipes that I CAN have and still stay in this diet. So tonight I'm going ice cream maker shopping to give it a try. I miss my ice cream horribly. I know this likely won't taste as good, but if it satisfies my craving for a nice, cold snack I'll be happy.

One other thing, I have not been working out at all this week. I've more or less been listening to my body and was curious to see what the weight loss would be without working out. Next week I'll at least be adding walking back into the mix. Not sure about throwing Taebo back in yet. I'm worried about not consuming enough calories and going into starvation mode even though this diet says you have no need to count them. I need to do more research on that side of things. Maybe I can compromise and instead of doing it 5x a week, maybe do 3x?
 
I discovered the same sort of ice cream as well using just bananas. Freeze them and put them in a blender. Creamy and rich. If you like bananas it's awesome. Good to hear you lost even without exercising, but exercising definitely helps in other areas where just dieting can't duplicate. But definitely a wise choice to listen to what your body tells you above all. Good job on the loss! And enjoy your ice cream! You've got a nice pace going, keep it up!

Morning weigh in was 216.4lb, down another .4lb. If my weight loss trend continues at this pace for a while, I'm going to be psyched! I made some plantain apple fritters for breakfast this morning. The first batch burned, but the rest came out fine. They were delicious! I had a few slices of bacon on the side as well. I'm feeling very content right now. :D

I was unable to find the ice cream maker at any local stores so instead I opted to treat myself to a new bed set. It's been a while since I got a new comforter and set of sheets. Kind of excited for bed time tonight. LOL
 
215lb even this morning! Getting ready to make some more bacon and plantain/apple fritters. Then off to a bit of shopping before watching the Bruins game this afternoon. After the Bruins game, I'll be taking my dogs for walks.. yes 2 walks. Will be walking roughly 2 miles. It's supposed to be in the 40's today. That's a heat wave for us! :)
 
I can't quit looking at our forecast, I think I forgot that winter would really end eventually! Enjoy that heat wave :)
 
Well, my walk didn't go as planned. I still went, but my mother decided to join me so we did a shorter route. Not only that, but not even half way through we had to turn around because someone had their dogs loose in their yard and they came charging at is. My dogs, both boxers, are very friendly but I didn't want to put them or ourselves in a bad situation so we turned around. On the way back we met up with another couple we'd never met before and we had a pity conversation about all of the developments going up in our neighborhood and at this point we decided to just head for home as it was starting to snow and it was getting colder. Still felt nice to get a little walk in and get the dogs out.
 
This morning's weigh in was exactly 214lb. That makes for an even 8lb loss in one week on the AIP that I'm doing. I couldn't be any happier. I was so nervous before starting this that I'd constantly feel hungry and unsatisfied. I also worried that my cravings would be out of control. That could not be further than what I experienced in the first week. Even on Sunday night I threw some apples sprinkled with cinnamon in the oven and everyone else had some ice cream with theirs. I was perfectly content just having them plain.

Today starts week 2. I'll be adding in a bit of exercise this week. Our clocks changed so we have daylight longer and it's supposed to be warmer so I'll be trying to walk at least a mile if not 2 after work. Looking forward to getting out in the fresh air!
 
Hey Mandy, just read your report - it looks like we went low-carb at the same time, you're definitely having better results than me, but you're also getting healthier foods than me. My first few days were really disgusting, but I had to munch on something so long as the carb count was zero. That meant a lot of sausage and hamburger patties. I'm past that for the most part. Keep up the good work!
 
Hi Mandy, I´ve been reading your diary and I´m sooo jealous! My elimination diet started with a week of just potatoes and rice. Cooked, with a tiny bit of salt. Nothing else. I just couldn´t do it...
 
Sounds like your new diet is working out well. I hope it helps with the inflammation issues! I love that first week water weight losses. Even when you know it's just water weight, you also know you are getting that much closer to your goal!
Good luck adding in the exercise!
 
LJ - My diet is actually more complicated and more restricted than just a low carb diet, but the principal is the same. :) Pretty cool we started at the same time. Hopefully we both have a lot of success with this. :)

LaMaria - Funny you're complaining about being on potatoes and rice because I'd kill to have a nice potato right now. It's off limits and may always be off limits. It's one of the foods I'll have to be careful with when I add them back as they're known for causing inflammation. :(

Mystic - Thanks! It was definitely nice losing 8lb in one week. A lot of people lose 20+ in the first month with this diet so hopefully I'll at least lose that much. We'll see....

Last night I took each of my dogs for a walk. I went different directions with both, but each walk was 20 minutes so I walked a total of 40 minutes plus another 15 which I did during my work break. Not bad, almost an hour of walking. Not just strolling either. I was moving! :)

My weigh in was disappointing this morning only because I've been spoiled with seeing it go down daily. This morning I weighed in at 214.4lb which is .4lb up from yesterday. Not too bad, but I much prefer to see smaller numbers every day! :)
 
I know there's a lot more to your path than just low-carb, but yours certainly falls under the low-carb category.

Good job on the great walk yesterday!
 
Thanks, I'm excited to be able to get outside again. Where I live we don't have many options for walking. There are a few side streets, but for the most part it's just country roads with no real paths if that makes sense. The first walk I went on was the more difficult one. The hill I went down didn't seem so bad, but when it came time to climb back up, that was another story. It felt good though.
 
8 pounds in 1 week you go girl! That is awesome. Sounds like your making some nummy food choices with your restricted diet plan.

Re: Zoodles. They should be al dente to soft. I like mine a little softer than al denter, as I like my pasta. Here's the recipe I use if you feel like giving it another whirl.



I don't have a food processor so I used the largest grate on my cheese grater. I cooked mine for about 5 minutes
 
Can you do spaghetti squash? That's pretty easy to do and has a very high yield for one squash (as in - plenty for future meals)
 
Good job on the walking! The potato thing is funny because I was supposed to stay away from thing that cause inflammation as well (skin trouble). It´s been a couple of years though, so maybe yours is just the new and improved version.
