Lucy's Diary

I used canned tuna, with a 125g can 4 bean mix, a chopped green onion, 3 tablespoons of low fat cheddar and a chopped tomato... I didn't use a tortilla either I used one of the soft rye wraps that I LOVE!

Wow had one of the most horrific days ever today, after we found out the cafe had been robbed it just got worse from there... (it wasn't my fault btw, the safe was forced open with a knife) It's just really horribly disgusting because we knew the person, my best friend (also the manager) had done sooo much personally for this guy, he had a HUGE massive panic attack after watching the security footage. My skin was crawling all day long- I don't know how anyone could be so HORRIBLE!!! So vicious!!! Ugh!!!

So blaaaaaaaah :( rang hubby and he's going to try to get home a bit earlier tonight. Bit of a naughty day again too after a customer brought us a massive pile of Easter eggs... boo to me and my lack of willpower!!!!!!!!!! Going to try harder again tomorrow, promise guys! Hopefully everything will be back to normal by then.

Here's the recipe for the Prune and zucchini loaf as promised!! WARNING: This stuff is sooo dangerous, it actually tastes like a full on proper naughty cake and I found myself craving it all day when I knew I had it for afternoon tea lol...

Prune and Zucchini Loaf

Ingredients:
1/2 cup stoned, chopped prunes
1 small zucchini, grated
1/2 cup sultanas
1 large egg, beaten
1/2 cup vegetable oil (I use rice bran oil)
1 1/2 cups self raising wholemeal flour
1/2 cup apple juice

Step 1- Preheat oven to 175 degrees celcius. Grease a loaf tin and line with baking paper. Set aside.
Step 2- Place prunes into a microwave-safe dish with 1/4cup water. Microwave on high for 3 minutes. Drain and cool.
Step 3- Place zucchini, sultanas, and cooled prunes in a bowl and mix well. Add egg and oil, stirring until well combined. Add flour and juice slowly, stirring well.
Step 4- Spoon mixture into prepared tin and bake for 30mins, or until an inserted skewer comes out clean.

SERVES 12
One serve = 195 calories, Protein 3g, Total Fat 10g, Sat Fat 1.5g, Carbs 22g, Sugars 9g, Fibre 1.6g, Sodium 132g

Ok so after having pretty much more bad days than good this week I think I need to change a few things... obviously I've already decided to introduce some variety which I think I was seriously lacking, but with my cals I've come up with a different version of 'cheat' day... Basically I'll eat the same cals I am now (with the 1000 cal deficit) but on Sunday (which is going to be dessert day, yay!) I have decided that I will eat as I burn, so no deficit that day- but it still means I get a 6000 calorie deficit each week which I can DEFINITELY live with (since this week my deficit was about 1000 if that lol) Will see how I go this week I guess!!
 
Just stopping in quickly before work- got called in to start early!! Ahh yesterday was a bit of a write off, hot cross buns and easter eggs were involved... I'm over it now though, kicked today off well and I plan on sticking to my plan for the rest of the week. Ordered the skincare and haircare for when I reach 67.5kgs, hubby is going to 'look after it' until I can prove to him I weigh that much lol. Yay motivation!!

Todays plan:
Exercise: 1hr walk, 30min gym

Breakfast: Tuna Quesadilla, zucchini prune muffin
Snack: Banana, fruity oat bar
Lunch: Sandwich with cheese, tomato, spinach
Snack: Apple, cannellini bean and chickpea dip (this is YUMMY! soo garlicky and good on crackers!!!), 4 vita weats, protein shake with water
Dinner: Sweet potato strudel

Going to try to get though 4.5L of water again today too, flush out all the crap I've eaten the past few days!!!!
Anyhoo gotta dash, will check into peoples diaries and stuff tonight! I'm not forgetting you!!!
 
Oh spewin. I've been really good and stuck to my plan today so nothing to do with that... but I got a msg from my trainer and he says that the person I was partnering up with backed out so it's just me today :svengo: He's going to punish me for not going Thurs too, boo!!

Work was so quiet today I ended up finishing 30mins early so didn't end up being a bad thing that I started early :) anyhoo I'm going to have some spearmint tea and get ready for the gym! I'll be back on later
 
Who's (kind of) a naughty girl then? OOOOOO PICK ME PICK ME!! Lol but seriously... after the gym last night was invited to the casino, I was feeling super pumped after my workout so I was all HELL YEA!!! So didn't make dinner, I quickly had a rye wrap with deli chicken, tomato, and spinach and a piece of cheese, then ran out the door. After a few (unsuccessful) hours of gambling, we decided to go clubbing... and I had 4 glasses of champagne!!! :toetap05: Trust me that was quite enough to get me at least a little bit drunk- I hardly EVER drink (last time I drank was Valentines Day at my sisters wedding lol) Anyhoo that led to around 2hrs of insane dancing before going home... So hopefully burned some of it off!!!

Todays plan- exercise is 1hr 45min walk around the river

Food:
Breakfast- Oaty buckweat pancakes with raspberry sauce (REALLY didn't like this recipe, pancakes were bland and the sauce was sickly!! NOT making them again- I much prefer my power brekki wraps :biggrinjester:)
Snacks: Cannellini bean and chickpea dip with 4 vita weats, banana, fruity oat bar

Heading down to my parents place for a combined lunch/dinner Easter feast, so have 750cals I'm allowed to consume there!! Which will be just fine cuz my parents are health freaks. Hope everyone is having an awesome Easter!!!
 
Hey Xenon- yea gym was really good, it just meant I had a one-on-one session half price lol. Did dumbell deadlifts with 30kgs!! And did boxing again which I love, so much fun!

So the Easter feast at my parents I thought I did pretty well, after adding it all up on fitday I did go over though!! I had a small slice of roast beef, about 1/4 large chicken breast, cauliflower, broccoli, 1 small roast potato, a small piece of sweet potato, a tiny piece of pumpkin, and a piece of my mums amazing homemade stuffing. YUM. Skipped dessert cuz I was so damn full, just had a coffee afterward. Also went for an extra 20min walk with my dad- he's really interested in fitness and likes talking bout how/what I'm doing. He can't wait till I'm a trainer so I can tell him what to do lol. So could've been better but obviously could've been a lot worse!
 
Re-assessed my goals and rewards today... here was the end result. Thought I'd make a couple of extra goals and make slightly better rewards to keep it interesting!

67.5kg- New hair and skin products

65kg- Day spa beauty package (pamper day!)

62.5kg- Weekend away

60kg- Hair done and pro model photo shoot

Running 6kms in 30mins- New makeup, makeup bag, specialty hair products

Reaching measurement goals- Buy an insanely hot outfit and have a huge night out- get hair done, nice dinner, casino, clubbing- the whole shebang! Invite people up and bring the camera!!

Hopefully will be able to reach the 67.5kg goal mark in a couple of weeks- just got to get my head on straight lol. I have the endurance challenge on the Thurs night gym sesh this week (it's week 8 already!) That involves a 10min jog on the treadmill going as absolutely hard as you can (it's judged in distance) So this week I really don't want my speed to drop below 12kms p/h for the full 10 mins, and for the final test I REALLY want to be able to not drop below 14kms p/h. Going to try my hardest on the eating front this month, fair enough I'm a lot fitter now but it'll be so much easier for me to run faster if I'm lighter too!!!

Well yesterday didn't end so great, the morning was all good but when it got to lunch time I realised we had no bread... so we went out and got Nando's (well Ash bought it, I went into the supermarket to get bread) I got a chicken steak and asked for a REG chips but he got me a large...! Then had a packet of Cadbury buttons (only 132cals, glad they taste awesome!) And finished off with a rocky road Easter egg... boo!! I didn't go over what I burned, when I was brave enough to go into fitday it pretty much said I broke even... so wouldn't have gained but didn't lose! Also didn't go for my jog. Easily drank 4.5L of water too, I was sooooooo thirsty after the chips. Was going to say this is a new week, but it's actually Tuesday already lol... public holiday yesterday has thrown me out of whack!

Had an incredibly super hard workout this morning, the trainer told me when I walked in he was going to push me hard... and he did... I'm actually still sore from my Saturday session (just my shoulders) now I'm going to be sore on Thurs and we have the endurance test and the weigh in!! SO doubt my weight will be any different to last time, as long as it says I haven't gained I'll be happy. Everyone seems to think I've lost heaps of weight, the first thing my mum said when she saw me on Sunday was 'Wow Lucy, your boobs don't bust out of that dress anymore'. Lol THANKS mum!!! I know I'm WAAAAY fitter, but could be doing so much more. I'm sooo used to being sore every day now from exercising I'm a bit passed using that as an excuse. Going to pick up some yoga dvds- used to do yoga all the time out of a book that I borrowed off my dad, but since we live 2hrs away now I think I'd be pushing it borrowing it for an extended period of time! So I figure gym 3x week, yoga 3x week, and 1 30min jog. On a normal day I walk to work and back as well.... but when I get home in the evenings, I usually eat straight away and then sit on the couch for a few hours till Ash gets home. I'm hoping to do an hour of yoga before he gets in- more for the relaxation and improvement in flexibility than a workout, but it's also better than just sitting there!! I used to be so flexi but now I struggle to touch my toes (I CAN, it just hurts lol) I miss the days when I could put my head on my knees! Going to get there again- I think I need to add another goal with a reward in that previous post...! :) Also got a meditation/self hypnosis cd on order- will probably get it next week- it's supposed to help retrain your mind to help with addictive substances- ie fatty/sugary foods, cigarettes etc. We'll see how that goes, I think I'll whack it on my ipod and do it before bed every night to make me sleep easier!

Well here's todays plan... exercise was an incredibly super painful 30mins at the gym (seriously, I HATE deadlifts, but in one of the circuits I did that seemed to be the rest station!!! Found out I'm awesome at skipping though, which I was amazed at since I haven't done it since primary school) Also my usual 1hr walk.

Food:
Pre gym snack: 2 vita weats, cannellini bean and chickpea dip, protein shake made with water
Breakfast: 2 pieces wholemeal grain toast, 2 eggs, 97% ff deli shaved ham, 1 cup spinach
Snack: Banana, fruity oat slice
Lunch: Sandwich on wholemeal grain with 2 slices cheese, tomato, 1 cup spinach
Snack: 1/4 honeydew melon, prune and zucchini loaf
Dinner: Prawn curry with rice.

Anyhoo, off to work I go...

I like yoga as well but probably won't be getting into that for a long time yet. I used to be able to touch my toes with my nose, now I'm just happy that I can paint them effortlessly again:smilielol5: :p

SOOO Posting this recipe right now, I just ate my prawn curry and I just about died and went to heaven... MMMMMMMMMMMMMMM!!!! And it was so easy too :)

Serves 4-6 (I divided it into 6)

Ingredients:
50g Butter
1 onion, finely chopped
1 clove garlic, crushed
1 1/2 tablespoons curry powder
2 tablespoons plain flour
2 cups (500ml) skim milk
1kg raw prawns, peeled and deveined (or 500g prawn meat)
1 1/2 tablespoons of lemon juice
2 teaspoons sherry (optional)
1 tablespoon finely chopped fresh parsley

1. Heat the butter in a large saucepan. Add the garlic and onion and cook for 5 minutes, or until softened. Add the curry powder and cook for 1 minute, then stir in the flour and cook for a further minute.
2. Remove from the heat and stir in the milk until smooth. Return to the heat and stir constantly until the sauce has thickened. Simmer for 2 minutes and then stir in the prawns. Continue to simmer for 5 minutes, or until the prawns are just cooked.
3. Stir in the lemon juice, sherry and parsley, and serve immediately with rice.

Nutrition Per Serve (If divided into 6. Doesn't include rice)
Protein 38g, Fat 12g, Carbohydrate 9g, 300cals.

Yes I've been incredibly healthy today, haven't even felt like junk food. Seriously hoping to get through tomorow with the same results, my group gym weigh in is on Thurs night!!!! :willy_nilly:

Total calories consumed today was 2034 and total burned was 3015. So I've done well :biggrinjester:
 
You are very consistent with your eating and exercise - I'm so jealous of your dedication! I'm really enjoying reading your entries and seem to learn a lot. Keep us posted on that cd you get! Keep it up!!
 
Thanks for dropping in Chubbygirl!!! Will definitely post about the cd - if it helps in ANY way (even helping me to sleep after an evening workout) I'd be super happy.

Forgot to mention I bought a couple of yoga dvds yesterday I was recommended- One is called Power Yoga Total Body Workout with Rodney Yee. Had a quick flick through it last night, looks really amazing... if I can do HALF of the advanced poses EVER in my life I'd be stoked lol. He's like an elastic band!! :ack2: The other one is called Kundalini Yoga- Beginners and Beyond. That one looks a lot more for relaxation whereas the first one looks like I might break a sweat :smilielol5: Going to start doing yoga 3x a week starting Friday. OOO and I may be starting dancing next week- won't hold my breath though lol. Would've gone last night but the police are still looking for the guy that robbed us, and he msged my friend on Facebook on Mon night and threatened him... so the cops asked him to the police station last night for a couple of hours, and for the next few nights, and log onto Facebook in there so they can track his IP address and hopefully pick him up. SOOO yea... last night was a no! But hopefully they'll catch him soon, life will go back to normal, and then we can go dancing. :hurray:

So yesterday ended really well, had a super healthy day and feel awesome today. Woke up an hour before my alarm and sprung out of bed!! Days like this often make me wonder why I ever eat unhealthy food- Always makes me feel so drained and lethargic. I'm really hoping to weigh in tomorrow morning being the same- or dare I say less- than 68.8kg (I weighed last Thur at 69.3kg and was going to weigh myself on the weekend, but I was bad over Easter... and decided not to lol) So if I haven't gained I'll be fully majorly mega stoked. And if I have... well, I already know I need to try harder than I did last week!!!

Food today:

Breakfast: Tuna quesadilla (OMG, I think I have become addicted to these things)
Snack: Banana, fruity oat bar
Lunch: Sandwich with 2 slices cheese, tomato, 1 cup spinach
Snack: 2 kiwifruit, homemade blueberry muffin
Dinner: Prawn curry with rice (my mouth is fully watering just thinking about it!!! OOOOOOOO BIG NEWS: Ash (my hubby) who fully HATES curry... ate EVERYTHING on his plate!! Then said that NEXT time I make it could I just use a little less curry powder cuz it was a bit spicy. Which I'm ok with cuz I'm still in shock he actually ate it!!!!! And ENJOYED it!!! YAY go me!! :hurray:)

Got some recipes I want to try in the next week- have an awesome recipe for chicken and squid paella... let's see if Ash is brave enough to eat squid :smilielol5: Got a heap of veg left in the fridge right now though, so I think when the curry runs out I might have to make a frittata or something. Anyhoo... :waving:
 
OMG Luz I loooove curried shrimp! I've never had curried prawns tho. I make really good curried scallops...it is similar to your receipe save I actually mix spices to make my curry and I use coconut milk instead of skim milk....don't know if that is very "diet" like :D


The yoga sounds really good. There is a whole thing behind kundalini and the seven energy centers in our body...not sure if you are familiar with that. I believe it stems from Hinduism and is used a lot in New Age practice :D

Ah I LOVE seafood so much, and I love love LOVE chilli and curry and all that stuff that my husband doesn't lol. If I was making it just for me I would've added chilli and made it super hot!!! I've actually never tried cooking scallops before. YUM. O now I have the worst seafood craving!! Dinnertime soon!!!
 
Good morning weight loss world!! There was a bit of a party goin on on my scales this morning- I didn't gain... and I even lost a lil bit!!! :party: :party: GAWD Easter is nasty lol. I'm now 68.6, so only 200g less than before... but I thought I'd gained so I'll definitely take that!!! Going to try my absolute hardest this week- I really really REALLY want to be 67.5 by next week so I'm at my 1/4 way mark!! And then I can have my first prize lol (will prob actually come in the mail on Wed or Thurs next week) So 1.1kg by next week... :jump: (that smiley has no relevance, I just thought it was funny) OOO it would also put me in the 140s if I weighed in pounds!! So GOING HARD this week!!!

Todays plan:
Breakfast: 2 pieces wholemeal toast with 97%ff deli shaved ham, 2 eggs, 1 cup spinach
Snack: Banana, oaty fruit bar
Lunch: Wholemeal sandwich with cheese, tomato and spinach
Snack: 2 kiwifruit, homemade blueberry muffin
Dinner: Prawn curry with rice (awww that's the end of it)
Pre-gym snack: Protein shake with skim milk, 2 vita weats, 1/2 a serve of cannellini bean and chickpea dip

Exercise:
1hr walk, 1hr gym sesh (ahh worried about the endurance test... got to keep jogging at 12kph or more for 10mins to beat my last time!!!)

I'll more than likely check in later today... I promise this week I won't go over my cals even once!! (To clarify: If I must have junk food I will, but something else gets cut... I really need my 1000cal deficit each day!)
