Intro/Inquiry about workout-work schedule balancing

Hey everyone, my name is Craig and this is my first post here on the forum so I'm just including a short intro here along with some questions I have about getting back in shape.

First of all, I am 29 years old (until February) and I am interested in learning more about fitness, nutrition,martial arts, and life in general.
Hobbies include: Drums/Guitar, Shooting guns, Fishing and exploring new areas. Feel free to ask any questions.

So, now that I've got that out of the way...

I have been working nights (11pm-7am) on a military base for the past 10-11 years now. It's a great job with alot of down-time but alot of desk time as well.
I really want to get back into working out and eating healthy from now on. The problem I'm having is deciding when and how to do it most effectively. That's why I joined here. Below are my physical details and questions.

Height: 5'11in.
Weight: 175-180lbs.

Question 1:
When is the best time to work out based on my schedule?(11pm-7am) Before going to sleep in the morning when I get home, or after waking up before going to work?

Question 2:
What should I bring to eat at work overnight? Types of snacks, meals, drinks...etc.?

Question 3:
What are your thoughts on workout programs such as "Insanity" and "P90X" or what type of workout routine would provide most efficient fat-burning and muscle gain? (I have some free weights and access to the two workout programs above.)
