hey girl,
just read quite abit of your diary and wanted to say i think your off to a great start! plus i love the fact that your good with recipes too and so can make your meals much more interesting, mine are always dull and boring which sometimes drives me insane!

i noticed by the way that you have psyllium husks in your breakfast menu, i wanted to ask if you get them from the local grocery store or a health food store? i think it's a really great idea. i actually add 2tbsps of natural bran to my oatmeal in the mornings, but i think i'd like to also have the psyllium husks to interchange things.

otherwise all the best as your get to your goal weight....oh and try not to let the weighing scale get to you....i was a victim of it just this past week, i weighed in at like the same weight for about 7days straight yet i was eating healthier than ever and exercising more than ever...i'd almost burst into tears every morning but just kept going on. then i finally had a breakthrough about 2 days ago so now at least it's going down again little by little every morning.

Hello Kori, well since I cannot cook, and am not really up for learning at the moment....:blush5: IDK, I am more stubborn than not. I will just :drool5: at your recipes for now....those Thai Turkey Patties looked easy for me to do... Mmmm Curry Chicken.

Today I cut up raw chicken for prob the first time in my entire life, it was quite disgusting actually...lol, but I cooked it! WOOT! It sure was nice and BURNT...hahaha ;) The first one I took out for a taste test, was perfect, I should have taken them out then. I put 1-2oz of chicken into my Pre-made Asian Salad. YUM.

No I am sorry to say.. :nopity: I have been a little piggie this weekend :piggy: nothing too bad, just wine (and lots of it).. and then over eating a bit (good stuff not junk) 'cause of the effects of the wine >_< Weekends are always going to be hard! Hubby and I have a real culture of drinking wine and talking and having fun on Friday and Saturday nights..we have always done this, and whilst I have no problems not drinking during the week.. the weekends are a killer :( I just weighed myself, and it has taken out my 1kg loss for the week :banghead: arghghgh Not sure how I am ever going to get around this, it is something I love doing.

Today (Sunday here) I am going to take it very easy and light food wise, and no drinking tonight... I need to get back to counting cals and get back on track.

Thanks for stopping by my diary, and for your words of encouragement! :D I just got my psyllium husks at a health food shop, but I think some supermarkets have them too.. not sure about where you are :) They do help to move things along!! In the Oatmeal you can't really taste them either! I also add oatbran too.

Yeah re the scales! I am not going to weigh myself now until next Friday morning.. it's just too discouraging for me!!!

I'm so glad you got your breakthrough!!! Woo hooo way to go!!!

LOL re the burnt chicken! You will get the hang of it if you keep practicing hun! and yeah raw chicken is disgusting! Don't forget to wash your hands really well, and the chopping board/knife etc.. anything the raw chicken has come in contact with as the juices are full of bacteria!

Cooking is definately one of those things that anyone can do, you just got to practice.. and the thai cakes would be a good begginner recipe actually they are really easy!!!

If you like it hot and spicy, and don't mind it chunky you will like this one..

My husband adores this, and we have it about once a fortnight I guess.

Tomato Pepper Chicken Curry

500gms (1lb) Chicken Thigh Meat trimmed of all visible fat - chopped 382
1½ Onions finely diced - 45
4 med tomatoes - 64
1 banana chilli - 40
1 red Capsicum (Bell Pepper) cut up into chunks - 35
3 long green chillies - 30
½ bunch Fresh Corriander (cilantro) finely chopped -10
½ bunch Fresh Mint Leaves finely chopped -10
2 tablespoons sweet chilli sauce - 70 (optional)
3 cloves garlic -15
2tbspns Fresh Ginger grated -15
1tspn Oil - 40

Spices - 100 cals approx;

6 Cardamom pods
1 Cinnamon stick (quill)
3 or 4 whole Bay Leaves
4 whole cloves

1tbspn Cummin Seeds
1tbspn Fennel Seeds
1tspn Black Mustard Seeds

1 - 2 tspns ground hot red chilli powder
1tspn Turmeric powder
2tbspns Corriander seed powder
1tbspn Cummin seed powder
1tbspn Garam Masala powder
1tspn Salt
Fresh Ground Black Pepper

Total Approximate Cals 856 - divide by portions (I made this into 4 small portions (214) and served with brown rice (216 per cup of cooked rice))

You will need a non-stick saute pan/frying pan/wok with a lid.

Step 1...

Over a low heat, warm the oil , add Cardamom pods, Cinnamon stick, Bay leaves, Whole Cloves and saute a few minutes until they are fragrant

Add the Cummin seeds, Fennel seeds and Mustard Seeds..
and saute a few minutes until they splutter and spit...

Immediately add the finely chopped onions, and Salt...Then
saute for about 10 or 15 so minutes over a low heat until the onions are softened, and slightly golden in color, (you want them cooked well, but not at all burnt or browned!)

Step 2...

Once onions are cooked well, add the turmeric powder, and the garlic and ginger.. saute for a few minutes until they no longer smell "raw".

Add the chopped tomatoes, and stir well, cook the tomatoes until they are breaking up and mushy (don't add any liquid, you want the tomatoes to fry not boil!)

*You can remove the big whole spices now if you wish Cardamom pods/Cinnamon/Bay leaves/whole Cloves *
- some people don't like them in the finished dish, and if you are serving to guests I highly recommend removing them now!
Personally I find they are great as they keep adding flavour, and as an added bonus you can't just shovel it in.. you have to be a little bit careful, thus slowing down the eating!!!

But do be careful when eating if you leave them in!

You can also cool, then blend the mix at this stage to chop the whole spices up, this gives a very tasty smooth style curry sauce.
(really blend well so no chunks of spice are left)


Step 3...

Once the tomatoes are done, add the Chilli powder, Cummin Powder, Corriander Powder, Chopped fresh chilli's Banana Pepper and Bell Pepper.

Add enough water to the mix to cover all ingredients stir well and cover with a lid then simmer slowly for 30 - 45 mins or so. Add the sweet chilli sauce - Taste and adjust seasoning.

That should be the sauce done, it should have not too much liquid left after this step, if it is still really liquid crank up the heat and reduce to a thick wet paste before going on!

Step 4...

Add your Chopped up chicken, cover and simmer well for 15 minutes or until chicken is cooked through!

Add the Chopped Corriander and Mint leaves, and Garam Masala powder, as well as Black Pepper, cook a few more mins and Voila!

Serve!

Hi Kori, your cooking sounds amazing! Its a tough balance though isn't it sometimes? A love of food and good cooking vs. moderation and healthy eating... at least I find it to be.

It sure is a balance.. I love cooking, but you end up "tasting" so much you don't really need to eat LOL not that it ever stops me from having a serve! But at least now I am very aware of it, and adding those cals to my total for my daily allowance.

hehehe, i totally agree with dreamingblue, we need to set a date when we'll come over and enjoy some of those delicious recipes!

i looked at the ingredients for the tomato pepper chicken curry and was so darn impressed. i think at any given time i have 2 sets of spices in my cupboard which are curry powder and mixed spice....no wonder my meals are so darn boring! will be coming here to jot down some ideas every once in a while:seeya:

Spices and herbs are my life! I couldn't live with bland foods - My husband teases me that I am really an Indian woman in disguise LOL :p

He likes it thankfully, although he also likes bland food.. which I hate, so he misses out there a lot!!!HAHA About the "plainest" we go is when he cooks a Steak on the BBQ!

last night we had some lovely little marinated pork medallions with this gorgeous salad.. might post up the salad as it was pretty darn nice!

LOL the portion control once it's done is not an issue, just the tasting and nibbling throughout the cooking process that gets me!!! I have to be very aware of it, and have really reduced that side of things!

Here is the salad we had last night.. you could make this lighter with less beans and or low fat cheese (we only had full fat on hand)



Warm Roast Pumpkin/Butter Bean/Rocket and Feta Salad

serves 2

2 cups pumpkin cut into small dice and roasted in the oven (100)
1 x 400gm can of Butter Beans - rinsed (382)
2 or 3 large handfuls of baby Rocket (Arugula) washed (10 - 15)
50gms Goat's milk Fetta cheese (125)

Dressing..mix together well...

1tbspn Balsamic Vinegar (2)
1tbspn Caesar dressing (75) (use low fat if you have it - I only had Cardini's full fat)
smidge of mustard
and a dash of water


Place Rocket and Butter Beans into a salad bowl, toss to mix,
add the hot Roasted Pumpkin then quickly toss and top with the crumbled Feta.

Drizzle dressing over the top and serve immediately!


Yum!

MMMMM Curry talk....I love curry. I only recently discovered it. We are all into spice in Texas but we rely heavily on mexican pepers (love those too)
 
heheh excellent!

It helps me anyway, as I want to know how many calories are in each dish, and to document my new ways of doing things that is low fat and "cleaner"

I might start a blog with the recipes though, make it easier to search etc.
