I absolutely love this stuff. Infact, I love it so much... I'm gonna run to the store right now and get some Chick Pea's and Tahini!!!

Mmm...hummus! I could eat that every day. Besides a few slices of flatbread I chop up lots of veggies for toppings to eat with the hummus. Cucumber, bell pepper, red onion, romaine lettuce, a few mediterranean olives and more fresh squeezed lemon.
 
I just made this recipe-- Love it! I doubled it since there are 4 other people who will gobble it up. The only thinig I did different was add a touch more salt and a few TBS of Olive Oil.

Mmmm hummus that sounds so good right now... There is a roasted red pepper that I get from the natural food store a block away that is SO good.
 
Hummus needs olive oil. It is good for you so why take it out? Add 2 tbs of good olive oil to this and you will be better off. I use a little more lemon juice than that also and don't use parsley.
 
that picture has olive oil drizzled on the top of it -but none in the recipe -I want a recount :D

Lots of lemon juice - 2 cloves of garlic is not near enough - and doesn't need the salt unless you're going for sodium free beans...

In the UK they had this brand of Israeli hummus that was an ORGASM in a plastic tub. Seriously. I haven't found its equal here in the US; maybe I should make my own. I keep looking for something as good as that brand of hummus and I am failing miserably. I love middle eastern food.

Sorry my Alabama friend, Hummus does NOT absolutely need olive oil. There is plenty of fat in the tahini. I would use one or the other or half the amount of each.

I tried store bought a few weeks ago and found out that I LOVE hummus. So I made my first batch a few days ago. NO olive oil, but did use tahini. 3 cloves of garlic (next time I am going to add about 5 or 6 cloves of roasted garlic). Cumin, smoked paprika and I added a little hot sauce and some chipotle peppers in adobo sauce as I didn't have any roasted red pepper. Also would like totry and skip the tahini and use good old peanut butter instead (thank you Alton Brown, Good Eats, Food Network) and a little olive oil.

My favorite way to eat it is one blue corn chips or very dense Pumpernickel. The blue corn and the Pumpernickel are my little indulgences as they have a relatively low GI.
