i don't know what your routine looks like, but if you are working out everyday, then it's possible that you are not letting your body recover and won't get optimal results out of each workout.
As for cardio, you should look into using an eliptical trainer because there is 0 impact ... and, you should be working your legs ... there are enough variations of leg exercises out there that you should be able to find some that won't do any damage or put any stress on your ankle
