Flyer's diary

well, no new knives yet, but got one of those magnetic holders... not to be an alarmist, but if you get one, be VERY careful... the strength of this magnet is huge. i'm going to go out on a limb and say if you put a finger between it and a solid piece of metal, at the very least you are going to have a VERY sore finger.

I'll take a photo of my magnetic knife rack & post it later. Seriously, Flyer- if only you knew how that does my head in. Your knives aren't even facing the same way
They are a wonderful thing.

lol... should they be sorted by height, too?
if it makes you feel better, all the keys on my key ring face the same way.

dang, that's a lot of steel...!
i like the wood handle, "machete-looking" blade next to the grater.

aside from a big stainless steel kitchen knife and 5-6 old steak knives, that's my entire collection. the two i'm looking at next month are a 6" utility and a rocking sort about the same size.

i was using it this morning, so i thought i'd show off my round blade... aka, Rival, model 1030v/3, food slicer...
Rival Food Slicer.jpg
from the early 60's or maybe a bit earlier... inherited from my mom.
all stainless steel ... from a time when appliances were made to last.

holy cow... just for fun i looked at eBay and there are dozens of these for sale including a few that looked brand new.
only saying this from my experience... this is a great slicer... again, very well made.
mine still works great and offhand i'd say conservatively, it's made 1000's of slices.

re: the Rival slicer... i suppose i should add a disclaimer. doubt if this unit would pass a consumer safety test today. no blade protection so if you aren't paying attention with your A-game, it wouldn't take much mishandling to slice off a bit of finger.

any slicer is a great aid for dieting, though. this morning i was cutting up some chicken breasts i roasted yesterday. nice thin slices seem to last a lot longer than chunkier knife cuts.

We really only use the knives on the right-hand side & the micro planer. The machete-looking knife was my grandfathers & it's there for looks really. I had another one that looked like a samurai sword & gave our younger son the choice between the two.
That food slicer looks amazing!

You and Cate have motivated me, just ordered a magnetic knife thing from Amazon, should take up a lot less space than my big block one.

in anticipation of getting a few $$$ Japanese knives, i thought it was a good idea to get one.
i've been just throwing my knives in a draw and i want to take care of these from day one when they arrive.

i've been noticing this more and more. i used to think that staying up late or just not getting a lot of sleep would burn more energy... you're awake ... it makes sense that you burn more calories than if you were asleep. but it turns out that nights i get 7-8 hours (that is a lot for me) or even days like today when i got up early, decided it wasn't enough and got another 3 hours, i am sooooooooo less hungry the following day. today is going to be an OMAD day ... it's after 5pm and i still haven't had breakfast. i'm a little worried about tomorrow, but not that much.

haven't posted my weight here in a while... still in shorts, so probably +½ ...

not sure why the numbers are sometimes red, sometimes ... hate to say hot pink... raspberry?

cooking chili today. i don't have much experience using Serrano peppers, but since i make this same amount so often now, i'll start with a few this time and try to keep track and adjust the next time. i can already see another round of them starting to grow, so i should still be getting them well into November.

You, and Cate, motivated me to get one of the magnetic knife holder things. This is in the little kitchenette in my office, not our main kitchen. Its in a converted garage so not a fancy place, but lacks counter space, I like this a lot better than the old block, much more space efficient. I just put it up last night, added the old block knife holder to the firewood pile!

Can steroids help with weight loss? I think not...

...Can steroids help with weight loss? I think not...

nice design so you can use those hooks.
my biggest kitchen clutter item is pot tops, but i'm working on a solution for that.

re: the steroids comment... i have a long history of being misunderstood, so i suppose i am overly concerned about my word choice sometimes.

wow, that was quick... two new knives showed up yesterday.
have to say... a little scary sharp.
i'm going to have to change some of my cutting techniques.

miyabi knives.jpg

i have my eye on a few more, but in retrospect, i should have gotten a smaller paring knife in this first round.
the same series has a 3.5" blade paring knife which i can see being a lot less cumbersome than the 6" utility knife at times.

Nice looking knives, where do you get them? It looks like they are Miyabis, and that seems to be a Zwilling knife, same parent company as Henckels.

Most of mine are nice Henckels that I have found used bargains on over the years, it is getting harder to do Henckels seems to have sold their soul, or the name anyway, to lower quality knife makers. Time was any Henckels knife was pretty good, not so much any more.

Your Miyabis appear to be the exception, I think they are pretty high quality. Not that I know much about knives. I did look on ebay and although I see some used Miyabis, I don't see any real bargains, not in my price range anyway.

My problem is that even good knives are not very good if they are not kept sharp.

good eye... exactly right. i looked around the net for a few weeks to sort out the better opinions. i couldn't find a bad review on these aside from some saying the price was a bit high. i have to admit one of my faults in buying anything may be placing too high a value on aesthetics. this is their Birchwood series and up close they look better than the pictures. i have a bit of a learning curve yet, but something i picked up at the same time was a 3-stone sharpening set.

just got some chopping up some peppers, onions and carrots. i'm sure this might wear off, but it was a lot of fun with a sharp knife for a change. i had to stop myself from over-prepping...! one habit i've changed immediately.... after use it doesn't get thrown in the sink. washed, patted down and hung back up.

Nice looking knives, where do you get them?....

didn't notice your first question ... i got them right from the ZWILLING website. somehow through the visit they offer a 15% deal and almost every other reseller had the same suggested resale price. think i paid tax, but shipping was free.
