1 banana (didn't want much because was going for my bike ride)

4 oz roasted turkey

1/2 cup stove top stuffing
1 1/2 cups of steamed brocolli and carrots

Mid-afternoon Snack
1 cup non-fat chocolate pudding
1 sheet of graham cracker
Total: 167

Supper
2 turkey sandwiches:
4 slices lite bread
4 oz turkey
1 tbsp butter
1 serving (oz) baked ruffle lays chips
Total: 580

Total for the day: 1361 calories. Gotta love the turkey.
Exercise: 1/2 hour bike ride this morning and I'll be going for another one in a bit.

Amen to that sistah... :D I just recently moved from a very Italian area in Northern NJ - the bakeries there would sell cannoli in two parts - the shell -and the filling in a pastry bag that you'd fill yourself just to keep them fresh... and not soggy.. buffet cannoli are just soggy and ick... :D
 
Mal: yeah, it was pretty soggy and just tasted like sugar cream. :( no real flavor.

Mike: yeah, I go bike riding for a half hour every morning and a half hour every night. Usually on the weekends I take a bit longer of a ride but, not this weekend. :(

I'm back

Sorry for going AWOL everybody. I was having a crisis. I woke up on 7/29 to a 1 1/2 lb weight gain. So, I figured ok, maybe it was some water weight. But when it didn't budge by Monday, I had to try to figure out what to do since I guessed it was a plateau. I did realize that I was awfully tired. So I figured I'd give myself a couple days off working out and get a couple extra hundred calories each day to see if that helped. So, Monday my cals were around 1800, Tuesday it was around 1700 and today they'll probably be around 16 or 1700. When I weighed in this morning I was back down to 228.5.

I'm going for my first bike ride since 7/30. Haven't exercised since then. Which I guess is only 2 1/2 days off of normal, but it seems like more. Guess the habit thing is true. :eek:

I'll check in with everybody's diaries tomorrow.

Well, I feel absolutely fantaserific after my bike ride. I could really tell that the break made a huge difference.

I think that my legs were so out of shape that the bike riding was like strength training. But with strength training you're supposed to give yourself a day break in between. And I wasn't. So I think I was working my leg muscles into exhaustion.

I know I was going a lot faster than normal on my ride tonight and it was a lot easier on the hills and I was able to keep the bike in what's usually the highest gear that I can stand.

So, I did a lot of thinking on my ride (in between singing to my headfones). I decided to change up my workout routine. I'm going to do some core & arm strengthening exercises in the mornings and do my bike rides at night, until I'm in better shape.

For the core exercises, I decided on the usual crunches, side crunches, bicycles crunches (basically crunch until I cringe) and plank exercises. For my arms, I'll be doing bicep curls, rows, tricep extentions, push-ups, lateral lifts.

I figure since I'll be working different body parts during different parts of the day, I'll have a full day of recovery in between. And I think I might also do a cardio video every fourth day as a break. I think I know was my salsa workout video is. That might be fun to try again (if I can find it).

I feel like I've got my second stride and I'm ready to go again.

Well, whatever I did must have worked because I'm down 1/2 a lb from yesterday. At 228 now. Yay! :D :D :D
I decided that I'm going to try to keep my cals at around 1600 for a while, I may lose a little slower but maybe I won't plateau again for a while. That whole plateau thing was kind of depressing. LOL

Good job on working around and adjusting your plan during frustrating times. It's gotta be difficult staying in an exercise plan that has outdoor activity during this monster heat spell. I walk real late or real early and it still is miserable and oppressive.

Keep fighting the good fight Mana.

Awwww Mana, I missed you!!!! We were about to get together a Sisterhood posse and ride out after you. But none of us could decide what to wear and we didn't know where to get horses, so it never really materialized. LOL!!!

Good job on the plateau busting. What a smart and sensible plan, which resulted in success!!! You have inspired me!!!!

1 serving of my homemade low fat spinach lasagna (the one serving is huge 3" x 4" & 2" deep)

Dessert (haven't had yet)
Shake:
1 cup milk
1 banana
2 oz chocolate syrup
Total: 300

Edit: I did not end up drinking it, only a couple of sips and then threw it out (~41 cals?). I was starting to get really hungry so I had a turkey sandwich instead. (349 cals)

Total for the day: 1705 calories and I've been stuffed all day.

Exercise: did weights for my arms this morning and tons of crunches. In about 15 minutes I'm going for a bike ride with the hubby.

My spinach lasagna went over really well. I didn't tell the hubby that it was low fat until he tried it. He loved it. He even told his co-workers about it and they wanted the recipe. I took some into my work also, since I use my co-workers as guinee pigs. (they've already tried my low fat blueberry muffins and my low fat banana muffins) I had to pass the recipe out there too.

LOL, I don't know where I put the recipe!! OK, I'll try to remember it by heart

24 oz non-fat cottage cheese
1 garlic clove
1-2 tbsp italian seasoning

Stick it in a food processer and blend until the cottage cheese isn't lumpy any more. (going to try next time to drain the cottage cheese a wee bit as it seemed a little thin.)

Pour mixture into a large bowl and add 2/3 cup low fat shredded mozzarella & 1/2 cup low fat sheredded parmesan & rinsed and drained defrosted frozen chopped spinach (16 oz, you could totally add more but I wasn't sure if the hubby would eat it if it had more). Mix well, add two large eggs. Set aside for now.

I had two bottles of Classico speghetti sauce, one italian sausage and one tomato basil. (they're fairly low cal, even the sauage one. about 4-500 cals per bottle)

1 large box of lasagna noodles (don't know if you'll need a large box though since I had about 4-6 noodles left in the box.) Don't cook the noodles.

In a 13x9x4" pan (sprayed w/non-stick) layer 1/2 of one bottle of sauce on the bottom.
Add a layer of noodles (3-4) Layer 1/2 the cheese mixture.
Layer the other 1/2 of one bottle of sauce.
Another layer of noodles (3-4).
Layer remaining cheese mixture.
Layer 1/2 the other bottle of sauce.
Another layer of noodles (3-4) and then remaining sauce.
Pour 1 1/2 cups water over lasagna and then I took a butter knife and scored around the edges and a couple places inbetween noodles (I was afraid the water wouldn't get to the bottom layers of noodles)
Sprinkle 1/3 cup low fat mozzarella over the top.
Bake in a 375 degree oven for about an hour.

We cut ours into 8 sections which were really huge pieces given the depth of the pan. You could totally cut it into 12 pieces and have a decent sized piece especially with a salad.

For 8 pieces of lasagna, it was 398 cals and 9 grams of fat.
If you were to cut it into 12 pieces it would be about 265.3 cals and 6 grams of fat.
That's of course using the brands I used too. You'd have to check the items you buy and count up as you measure the stuff out.
Boy, was it good though. I'm going to have the last piece for lunch. Yummmm

Did I write that correctly? 1/8 of the pan is 398 cals and 1/12 of the pan is 265.3.
