Egg white mess!!

Earlier today, I made my first attempt at an egg white omelette. Now, I am the first to admit that I am a useless cook....enthusiastic, but useless! I ended up with a bit of a 'splodge' on the plate with chopped turkey breast mixed in with it.

Now, it was perfectly edible and I actually quite enjoyed it but, I desperatley need some tips on how I can create an omelette that actually stays in one piece!!:confused:
 
Spray some pam in the pan and let the eggs cook as if you were cooking a hamburger. Flip it with a spatula when the bottom is just starting to turn white/tan.

Then let the other side cook for about 1-2 minutes. Put all the fixins you want on top and flip it in half with the spatula.

BAM ! You have an omelette better that Emeril can ever cook!
 
If its the flipping part that you can't do as well... using a bigger pan so the egg spread out more, you can eliminate the flipping part, making sure the heat is on low, so the eggs won't burn or just extremely overcook.

Here's what you can do.

After seperating the egg whites, from yolks, wisk well.

Just as LV said, use pam non-stick spray. Works wonders. Just one quick swoop round' pan.

Use a bigger pan, to eliminate the flipping.

Keep heat to low, pour eggs in, cover it, when you notice it right bout done, and there is no liquid remaining, splash in your toppings.

Take your plate, let half of your omelette slide out onto your plate, and tip the pan so that other half folds on top. No flipping required. Good luck!
 
I got some oil spray which helped but, as it turns out, the main problem was the pan I was using. I splashed out on some moderately expensive non-stick ones last week and, since then, my omellettes have been awesome (well, they have stayed in one piece anyway!!)

Another tip is once the outside of the omelet starts to set up, use a fork to stir up the center part a bit. The underside of it will be partially cooked and by stirring it up, you will allow the upper part to come in contact with the heat. But definitely use some kind of non-stick spray.
 
Well i thought i might add if you cant flip the omlet, then you can allways put it under the grill for 2 mins:D
 
i have used Pam, and really didn't like that it had a slight flavor.. so i use spray butter. it also has 0 calories, but it tastes like butter so it goes well with cooking almost anything! i LOVE that stuff! great on low calorie pop-corn too!
