Sorry to hear you gained some. But, that said, I would try to forget about it and pretend that this is the first time that you are doing this. You are where you are now anyways, you'd better use the starting point that you have. Any step forward from there is worth celebrating!
8 lbs is a realistic goal, I would say. Eating 1600-1800 is also a good amount of food (not too little, not too much). Good to see that you know what to do!
Btw I also had to re-lose some weight a few times. Here's my history:
Late 2005: 86 kg
Early 2014: 106 kg (+30)
Late 2014: 84 kg (-22)
Late 2015: 98 kg (+12)
Mid 2016: 89.5 kg (-8.5)
Late 2016: 98 kg (+8.5)
Early 2017: 87.5 kg (-10.5)
I am glad that I made it past my mid 2016 weight, but I kind of forgot about it. I was focusing on the process, and making it sustainable. After all these upswings and downswings I realized that sustainability of weight loss is much more important than the pace of weight loss. My current hypothesis is that this sustainability has a lot to do with creating habits, with working on your own psychology (exploring questions like: what motivates me to eat too much? why did I quit exercising?), working on your mentality, etc. In short, I am developing a holistic approach to weight loss, through reflection, trial and error.
