AmbaLove is Tracking the Journey!

I'm sorry to hear you've been so sick! :ack2: I hate :puke:, so I feel for ya.

Congrats on the weight loss. I hope it doesn't go back up once you're done being sick.

Val--I'm not a dark chocolate hater. In fact, I ate some today. :D

I have heard that lactose intolerance is from killing off the good enzymes in milk in the pasturization process. The enzymes are what help you digest the proteins. We were getting Amish cream that was unpasturized, and it was fantastic. I believe you can buy it as raw milk. I don't know if that would help your sinus issue, but it might be better than getting rid of dairy all together.

Sort of. Raw milk contains lactase, which is the enzyme that breaks down lactose, which is the sugar (not protein) found in milk. Most people also make their own lactase; those who don't are lactose-intolerant. Depending on the level of lactose-intolerance, raw milk may or may not be helpful.

IMHO, what Amber's described in symptoms says "allergy to cow's milk protein" more than it does "lactose intolerance." But everyone's body is a bit different, and once she's figured out (through elimination diet) if cow dairy is the problem, I think the suggestion to try reintroducing alternatives is a good one.

Yes, Phoebe is right. I believe I have dairy sensitivity, not lactose intolerance, and they are very different things. If it is found to be the culprit, I will just suck it up and go dairy free entirely. I will miss cheese, but it is doable.

I ate dinner tonight and so far, so good!

i think i caught your bug...lol no vomitting or diarhea yet but im on the verge...and i dont want to!!!!!:banghead::banghead::banghead: i hate throwing up and i cant even rest cause i have 2 kids(which could easily go with grandma but i have to breastfeed fatimah).....
hope you are doing better.... so are you dairy free now?

Rena

See? RAW FOOD BABY!!! Ooooh yeah, no wonder I like and have no problem with the raw milk cheddar I been NOM NOM NOM NOM-ing on!

But yeah, elimination is the best way to go to see what foods work for you. I have WHEAT sensitivity dammit, and I LOVE me some bread. RUFF!

Hope you're feeling better! :hug2:

Day 1 Dairy free, so far so good. Ate mexican last night to get my last cheese fix.

Rid the house of all dairy today, as I do not need the temptation!

Rice Dream Caramel Chocolate Chai SUCKS.

I do enjoy the Green and Black's Hazlenut and Current Dark Chocolate Bar, but not the Maya Gold that Val recommended. It tasted more like orange peel than oranges. Or orange liquor, or something. Not my thing.

Anyway, I am feeling better, eating and able to drink all my water since wednesday. Still really tired, sleeping like 12 hours a night.

Hoping to be completely healthy by Monday!

Wow. I was eliminated in the challenge. Kind of hard to go from second in the whole thing to eliminated! But...I could not help having the flu. Life happens sometimes...even teh sucky throwing up parts.

I was so sorry to see you go! MissLadybug and AmyRB are out, too. :( I BARELY scraped by this week, and I was in first place on my team last week.

I'm glad you're feeling better. So, is it only cow's milk, or could you eat say, goat cheese and milk? I love feta. Keep us posted on how dairy free works out--if it makes you feel better. :)

I am not sure on cow's vs other milks, but for now, I am cutting out all animal milks. I am sticking with rice milk, and occasionally soy. Oh, and coconut milk in the yellow curry I plan to make this week!

mmmmmm curry!!! last time i ate that i was sooooo pissed at myself when i saw the scale the next day!!!! I think its all the sodium. Im sure making it at home is better. so....when you posing the recipe????:)

Rena, if it was Thai curry, it was not the sodium...it was the coconut milk. It is CRAZY high in fat and calories.

My curry is by no means healthy, which is why my husband gets it twice a year! He LOVES it (so do I) but it is such a diet killer that it is reserved for special occasions (this time I am making it for a friends engagement party.)

I'll post the recipe, but I am NOT advocating it as a "healthy" recipe!

Thai Yellow Curry

Stir together over medium heat:
2 cans coconut MILK (not cream)
1 T yellow curry powder
3 T yellow curry paste
(You can easily make this a red or green (panang) curry, by switching pastes, but go easier on red, it is spicier, or add peanut butter and peanuts to red curry to make a masaman curry)

Taste the base. Add more POWDER if it is not spicy enough, add more PASTE if it lacks flavor. The powder gives more heat, but your well rounded flavor comes from the paste. I like Mae Ploy brand paste the best. If it is already too spicy...well...other than add more coconut milk and make a TON of curry, there is not a lot you can do, just eat it with more rice to cool your mouth! If you know you are a spice wimp, decrease the amounts above and add in until you are comfortable with the heat level.

Add 3 C. vegetables, any you desire, suggestions:
bell peppers of any colors, sliced
zucchini/yellow squash, coins
onion, sliced
potato, cubed (add after other veggies have simmered for 10 minutes, or it will disintegrate before they soften! Add it in the meat step.)
mushrooms, sliced
baby carrots, whole
pea pods, whole
baby corns, whole
asparagus, top 2 inches, whole

Bring to a boil, and simmer veggies for about 10 minutes. Keep an eye on tenderness, you don't want to make mush!

Add in meat, sliced in thin strips (I use steak and chicken, but you can use pork, shrimp or lamb), and the potatoes now, if you want them. If you are vegetarian, leave the meat out and throw in tofu cubes.)

Also, if you like pineapple or mango in your curry, add them with the meat. If you use canned pineapple, dry it well first.

As soon as meat is cooked through (usually 5 minutes or less), turn to LOW. Heat until you are ready to eat (10 minutes up to 3 hours!) The longer you cook on low, the more the flavors meld together. Curry is actually better as leftovers, truthfully! So cook some on the weekend and have it as dinner during the week, or portion out into lunch sized bowls.

Serve over Jasmine Rice.

(One cup of curry, WITHOUT rice is 8 weight watchers points, according to my friend. So, REALLY watch portions here. I usually eat a big salad and a small portion of curry.)

I am also making Puff Pastry Kisses for the party!

Again, not a good, healthy, diet friendly recipe, but SO SO SO good!

Puff Pastry Kisses

4 sheets puff pasry dough, cut into 6 squares each, let soften at room temperature for 1/2 hour or so.

On each square, add 1 T. semi-sweet chocolate chips (easily modified to dark or milk chocolate, if preferred.) Use the best quality you can afford, I like Ghiradelli. The mini chips are a great option, also.
On the chocolate chips add 1/2 t. sliced almonds and a few dried cranberries.

Wet the edges of the square and fold into a triangle, pressing edges with a fork to seal. Use a toothpick to poke a few holes in the top (I like to do designs, hearts or inititals.)

Bake at 350 30 minutes or so, until puffed up and golden brown.

If you like your tongue, let this cool a few minutes as the chocolate will be super hot.

Eat warm (with a scoop of vanilla if you really want decadence!)

Guys, I am looking at February and I have decided it may not be a great loss month. My anniversary, Valentines Day and my birthday all fall in 11 days of each other. 5th anniversary is the 7th, v-day 14th and B-day 18th.

I have decided to be more than happy with maintaining this month and getting back to losing on February 19th. I think it will be hard enough to do dairy free this month, let alone try losing with tons of special occasions.

I would still like to hit my 203 birthday goal...but I am thinking I won't stress too much about it.

Luckily, February is a short month. :D I just realized yesterday that my birthday is on one month away, and I had planned on being in Onederland by then. Soooo not gonna happen. :( Oh well, if I do my best between now and then, I might be just over 210--and that's close to it.

That curry sounds yummy. I've made one like that before only with green or red paste. But, like you said, the coconut milk makes the calorie count go through the roof. Then add rice and it is enough to make a person :svengo: . lol Hey, if I walk to your house I'll burn off enough calories to compensate. :smilielol5:

:seeya:Hi Amber
I hear ya on those food issues in February! My b-day is this Monday, and obviously V-day comes not too long after, plus out of town relatives visiting, etc. But I do find if I just stick with my exercise & eat the goodies IN MODERATION (groan!:banghead:), my weight still goes fairly well.

Good luck with February!
Cheers
Janice

Hi Amber

I am so pleased that you are clearly feeling a lot better. I just posted this in my diary for you.

Hi Amber

I was just about to pop into your diary. I hadnt realised that you had been ill until I saw you eliminated and since you had been third across all teams at the end of the previous week (behind The Krinse and Wulsk) I had really expected you to be in long after my elimination. It was only when I was looking in your team thread trying to understand the eliminations that I realised what had happened. In fact I expected you to be fighting it out in the final week. I had fully expected the eliminations to be from the black and red teams because blue team people had been in overall 1st, 3rd, 5th and 6th at the end of the previous week.

Eliminated or not - I am sure that many of your friends know how well you actually did in this challenge. None of us can help being ill - and there really is never a convenient time to be ill.

The reason why we are all on this forum is that we desire weight loss. You lost weight last week (when I actually gained weight).

I hope that you are feeling a lot better now. I will pop over into your diary and see how things are going for you otherwise.

Take care
Love
Margaret

I do pick milestones for myself - weights that I would like to see - but I never really set a target date for achieving it if I can help it. I know that if I keep working hard I will get there as soon as possible. This may be the best idea for you too.

It sounds like you have a great February lined up with all those celebrations. If you can manage to maintain through all those celebrations you will have achieved a lot.

I hope that avoiding dairy helps your health issues. Testing that theory will be another major achievement for the month.

Take care
Love
Margaret
