Congratulations, Lee. I really mean it. You've worked very hard, you've been consistent and it's paying off. You're 25% of the way there baby!!!

Maleficent I got around to eating that indian dish and it was crazy good. Im gonna have to figure out how to make that stuff for myself.

Somewhere on a bookshelf I have a Madhur Jaffrey cookbook, she used to have a cooking show on PBS that specialized in Indian cooking - the recipe is either in there, or in a vegetarian cookbook I've got.. I know i have it somewhere :)
 
I'm more organized than i thought :)

I've never made my own cheese, but there's a recipe for making paneer , I'm too lazy for that, I'd probably substitute plain old farmers cheese, or queso blanco or even an unsalted mozzarella... :) Madhur Jaffrey also suggests that you can use tofu instead of the paneer.

Mattar Paneer
6 servings
1 medium sized onion, peeled and chopped
1 inch cube of fresh ginger, peeled and chopped
6 tbl veg. oil
paneer (plus 2 cups of the whey)
1 whole dried red pepper
1 tbs garam masala
1 tbsp. ground coriander seeds
1/4 tsp ground turmeric
3 medium sized tomatoes, peeled and minced
1 tsp salt
1/8 tsp freshly ground black pepper
3 cups shelled fresh or 2 packages defrosted frozen peas

Put the chopped onion and ginger into a blender or food processor along with 1/3 cup water and blend until you have a smooth paste.
Leave paste in the blender container.
Heat oil in a heavy pot over a medium heat.
When hot put in the pieces of paneer in a single layer and fry until golden brown on all sides. This happens pretty fast.
Remove to a plate.
Put the dried red pepper into the same oil. Within 2 seconds, turn the pepper over so that it browns on both sides.
Now put in the contents of the blender (keep your face averted as the paste might splatter).
Fry, stirring constantly, for about 10-12 minutes, or until paste turns a light brown color.
Add the coriander and turmeric and fry, stirring, for another minute.
Put in the minced tomatoes.
Stir and fry for another 3 to 4 minutes or until the tomatoes turn a dark, reddish brown shade.
Now pour in 2 cups of the whey.
Add the salt and the black pepper.
Mix well and bring to a boil.
Cover, lower heat, and simmer gently for 10 minutes.
Lift cover and put in the paneer pieces and the peas.
Cover and simmer for 10 minutes or until the peas are cooked.


Garam Masala, can sometimes be found in the grocery store, or you can make your own out of :

1 tbs Black pepper
1/4 tbs Cloves
1/2 tbs Cinnamon
1/4 tbs cardamom
1/4 tbs Cumin seeds
1/2 bay leaf
1/8 tbs Coriander seeds
Toast them lightly in a dry skillet and then grind up...
(it keeps in the freezer for a few months, if you don't use it all)

I actually did some googling on the recipe as well - and there are as many variations on the recipe as there are chefs :) have some fun experimenting and let's see what your final result is :)
 
well its another day. I woke up hungry this morning and its a weird feeling. I use to say I was hungry but this morning It woke me out of a sound sleep. I have been putting in about half of my calories needed for the day and its working well so far. I'm trying to be as scientific as a hillbilly can be. Now with my new weight it says my calorie to maintain my weight is now 3695 calories. Following the half rule That now leaves me with 1847 a day to take in.( I don't recommend dropping your calories to half unless you are as large as I and have a large cushion of calories that you can do without.) Now as I lose more weight the drop in calories seem more. The first few times it was in the few hundred range. This last seven pound drop really made a difference. I'm basing all this on the sedentary exercise level since I don't do much due to my back. Now that I think about it though since I have lose the fifty or so pounds my back really feels better than it has in awhile. Anyway back to the calories, Now I'm going to have to be a little more creative with my calorie intake and watch out for those empty calories. Still eighteen hundred calories Is quite alot If I watch what I eat. Now I realize I can go up higher than the eighteen hundred and still lose weight but with the half rule I have been following Its coming off and I don't feel week or deprived.
 
You are totally inspiring me to stay on track! I can relate too the back problems. I herniated a disk a few years ago and it has never been the same, until recently when I had to take two weeks off work and lay flat on my back. It really does suck doesn't it. I've also had to get creative with exercise, trying to sneak in small walks anywhere I can. Looks like we'll get better together, huh. :)

I woke up hungry today too. I'm following the same principals you are for the most part. my calories are around 2400, so i'm keeping it 1400 or below. 50 pounds of weight loss is AMAZING! You should be so proud!!!

Paper moon Thank you. This is the first time a diet hasn't felt like a diet. I get so much support from the people here. The people here give you so much support. It just feels different getting it from yall rather that a stuffy old doctor thats bigger than you are. (by you I mean me) If you go to a support group there is always fees and exams and well its just a money thing. Here everyone seems to care which is odd being I don't know any of the personally except for one. My grandmother told me once that a stranger can be your best friend in a time of need and she is so right.

Sillygirl yea back problems can really hinder your exercise program. I wont go into a bunch of gory details but the fusion went well then the two staph infections showed up and caused two more surgeries. I tried going back to work in the chemical factories and the bouncing of the trucks and pulling of the hoses and it was just too much. People don't realize how much you use your back till you have been through it. I hate it happened to you but its nice not being in the boat alone.
 
Breakfast--- 2 eggs on 2 slices of wheat toast {70+70+70+70}
(280 calories)

Lunch---- Lean gourmet meatloaf and potatoes and gravy+ 2 slices of wheat {210+70+70}
(350 calories)

Dinner----- CHEAT NIGHT-- I had Chinese and I didn't have any rice or such. But the worse thing was one of those fried biscuits and I had some fruit salad with whip cream and 1 chocolate chip cookie. The good parts were the steamed chicken and viggies and boiled shrimp. So it wasn't bad other than about the time I got home I was sick. The sugar sat kinda hard on my stomach and wont be having much sugar stuff in the future.


Snack--- soy- mocha late- sugar free

Drinks--- water, unsweetened iced tea

Brunch--- Lean Gourmet creamy parmesan chicken
(260 calories) (Didn’t really skip breakfast but by the time I woke up it was lunch time.)

Dinner--- salad with 3 cups of Iceberg lettuce, avocado, light ranch. {23+365+80}
(468 calories) dang avocado hummpt…..

Snack--- 2 guiltless fried eggs and 2 slices of turkey bacon.{70+70+35+35}
(210 calories)

Drinks--- water,
(0 calories)


Total--- 938 calories
 
Sounds like I am on your diet plan! How long have you been on the diet and how long on the 1K plan?

I have been on a 1000 calorie per day. As I slowly increase my distance powerwalking, I find that making sure I get the full thousand is important for my energy level the next day.
 
even your cheating wasn't that bad... sorry the sugar didn't sit well with your tummy... guess you've trained yourself too well :)

was the avocado worth the wait ? :D
