A few diet questions

Hi,
I'm an underweight 20 year old male of average height who wants to put on as much weight as possible.

I've heard that if you have too much protein and not enough carbs you're metabolism will power away, causing you to lose weight. Is this true? I've also heard that eating carbs in the evening will make you put on weight... due to metabolism again. Is this healthy?

I also find it hard to eat the large amounts required to gain weight. Anyone with tips on increasing appetite?

I work out reasonably regularly and am generally a very healthy person. What I would like to know is if the above things that I've heard are true, and if anyone could add to this or reccomend other dieting tips to help me and people like me gain weight.
