Say if I have to consume 2500 cals a week to keep gainin' weight, and only consume say 2100 (2800 less a week)...would I still gain weight, but just not as fast...or not much at all?
It depends on how many calories you need just to keep your weight the same. And that's different for everyone, usually depends on sex, weight, daily exercise, and just genetics.. Personally I need 4000+ to gain weight
