I love chicken breast myself, and actually I think we grill out 4 days a week, and then crock pot the rest. HAHAHAHA Hey, it's hard for me to get home now that I'm going to the gym so much and fix everything before 8 O'clock, so the grilling and crock pot for me works great!! I can do chicken about 10 different ways, I love it and I get real creative with it. But I still think I should come by your place for lunch, mmmmmmm Keep up the good work!

Hi Debi!

Your meals for the day sounded delicious!! I have found that when Beth and I get into our diet plan, we seem to get in the kitchen and invent meals together. Some of them end up pretty darn good too and make it to our recipe box! :)

We'll have to share some of them with you sometime!

Have a great day! :D

Oh yum. I love the way you are eating now. It sounds so delicious!! Plenty of inspiration there too. :)

Oh yeah, chicken is the main meat at our house, chicken breasts, flash frozen chicken tenders and ground turkey (hard to find ground chicken on a regular basis).

Bruce and I like to modify recipes (we're Food Network fans) and make them lower fat/calories, so we have invented a lot of great ways to prepare chicken. :)

that sounds like a delicious day. .even when you're out and about most of the day being swimming mom... no mini van right? :D you still pull that off :)

NO, No mini van :) I drive a pick up!

Chicken breasts are cool for being inventive like that -a nd it's good therapy to flatten out a breast too-just pound the crap out of it for a minute or two :D

You know - this has benefits that far exceed nutrition!

I concur, that food sounds excellent. I am such a boring eater when I am adhering to the plan!

If I eat boring, it becomes prepackaged - I'm not allowed to do that ;)

Debi, make it sound like there's no restriction to it at all. All that delicious food at less than 1700 cals! Isn't it amazing?

It is amazing :) It also drives home the fact that I must have SERIOUSLY over eaten to gain the weight in the first place - because I had a lot of food yesterday!

Debi's rep...
I can agree with that! Thanx for the encouragement in my diary... Hope you have a fabulouse day forum diva!:D

Hey there - I hadn't even noticed that beacon thing! I hope you have a good day too SC :)

OK - I'm going to have to look into more recipes for the crock pot - every single thing I put in there comes out tasting exactly the same.

We didn't get home from swim practice until 7:30, by the time I got every thing prepped and in the oven, we ate at 9:15. I need to get meals planned so that they're close to ready by themselves when I get home.

Tonight is wine club - the way it works is we start at 7:00, drink the wines, then around 8:30 we have dinner - it consists of 3 casseroles and 3 salads.

Tonight is my turn to bring a casserole - I have NO idea what to make. Any suggestions?

Did you say Wine Club??? Oh my gosh! I need to move back to CA and fast!! :D How many do you typically try?? Where do the wines come from?? I wish we had that here. :(

It almost seems too good to be true. There must be a catch. You probably have to trade your soul to join Wine Club.

How about this:

1 lb. each of scallops, shrimp, & monkfish
garlic, 8 cloves
1 big onion
1 bunch cilantro
1 bag spinach
1 lemon
1 mango
3 cubs tomato based broth ( I buy mine from TJ's in a box)
white wine

mince the garlic and sautee it
cut up the onion and sautee
fry all the seafood in a light layer of olive oil
put it all in a pot with the tomatoe broth.
cut up the mango in small pieces, and add it with minced cilantro and juice from the lemon.
let it all simmer for 10 - 15 minutes
add a cup of white wine

Serve with brown rice.

Most casseroles I know of are not that healthy. ;) Here are some tasty ones I've tried./QUOTE]

Thanks for the links Sunny - they do look good :)

The theme of the wine club each month depends on who is hosting it. There are generally 8-12 different wines to try :)

It almost seems too good to be true. There must be a catch. You probably have to trade your soul to join Wine Club.

It is a pretty hard group to get in to - a member practically has to die first

How about this:

That sounds delicious Tom - I'll definitely try it one night for the family!

Oh it would be so good if they accepted monopoly money! I wonder how many sets I own!

I've been MIA since early April. Just wanted to stop in and see how you're doing. Have a great day!

Good seeing you posting again!

They're getting better - I don't hoist myself up to a starting position any more - I kinda jump and am able to pull myself *almost* (read: about half way up) and slowly lower myself down. It's tough though hanging on to a bar through a chain link fence.

I'm so high tech ;)

i love the half assed pull ups :) and super impressed with the times too..
