Lettuce wraps...

I did some experiemental cooking recently in the area of eliminating breads and such from the diet.

Taco Lettuce Wraps:

Use McCormick's Taco seasoning (probably the best in terms of ingredients).
1lb 90% or better lean ground beef or sirloin (I had 93% lean).
Romaine lettuce.

The romaine leaves make a perfect taco shell substitute and it's vegetable so you get your per meal intake.

Just make it up according to directions and drain as much fat as possible. Really good!

Also, garlic chicken.

Cut the chicken into strips
Put about 1/2 clove of garlic, 1 tbsp butter and about 2-4 tbsp soy sauce into a pan and heat.
Throw the chicken in a heat over a low flame. Stir it up so it cooks thoroughly.

except not tacoshell ... a tortilla substitute ... you wrap it entirely and you almost feel like you're eating a roll..but it's not .. or in sections ad its like sushi.. but its not.. or litlle cups like volivants ..but again they aren't .. and then you also can omit all that yucky excess fat you probably dont need but might like to use on your bread and so on..
boiled egg whites and tomatoe and whatever hot or cold salad and veg combo inside.. also good ..fish and no fat cheese with corriander .. or tuna.. with apple and celery and no fat mayo and fresh mint is awesome !! ... even just a few teaspoons of protein with a little bit of salad or a small portion of fruit and a protein shake makes a good snack for recovery,maintainence or a just something you can throw together on your way out the door or when you only have a few minutes to eat or whatever.. and the extra leaf in your diet directly deoderises your body from the protein your eating aswell..
with a good protein inside or on the side or in glass or whatever you can wrap almost anything you like.. if it's edible .. you can wrap it in a lettuce leaf ..or spinache or silverbeet ...or a light thin cabbage is okay on occassion aswell..
you would be seriously surprised what tastes good .. cold or hot beans in lettuce with extra hot chilli sauce with tomatoe or homemade salsa and no fat cheese will change the whole dish again :D ;) .. if you need a couple of extra carbs but don't really want to do bread or whathaveyou you can even throw in a few rice noodles with some fish ..even plain is good.

try spooning a bit of your egg white omlette in a leaf.. also good .and for a change ..you can add tomatoe or peas and corn ..entiirely different meal.


expiriment with sqeeze tube herb combos instead of salt and sauces and so on.. awesome way to eat ! l-)

I'd like to make my own salsa. any good recipes?

Because I wanted to be that at times, and particularlyfor men, sOme complex carbs that arent a veg would be a good idea. If you're trying to cut down, then this is way to get only a few and have them count .

Cynic, google is your freind . .. just modify salt and oils and sugars if there're any and make it as hot as you like..

basically fine dice tomatoes with or without skin, concass ( remove seeds) if you must, fine chopped onions/capsicum little canned whole tomatoe mush, maybe a tiny bit of chutney and chilli .. if you cook it, it'll probably work better.. if you have it raw, throw in some herbs like basil and mint or corriander depending your mood.. oh and a half teaspoon or so of a sugar alternative for secret touch ..

the italians do something similar as an antipesto but they also add olive oil and maybe a splash of vinegar or lemon or something and use on a thin slice of crusty bread.. i do it on rice crackers and it's pretty good!...throw this stuff on your boiled egg whites or just about anything and it should help you not to be tempted to do sauces and salts etc. between that and your herbs and soup for condiments and no fat cheese, really it's all you should need 99% of the time... bland good. and after a while it all tastes like something..
What about you .. do you have any other favourite things you use for flavour??.. kinda thought the soup was pretty creative.. proud of thaat ;) :) ..

so I had that for dinner tonight. the seasoning wasn't all that great that I bought from the market. pretty damn good though. too bad the lettuce was so small it was hard to wrap. I couldn't find bigger sizes @ the crappy market.

Just wanted to add that Mcormick makes a good reduced sodium version of their taco seasoning.

I think I'm gonna have to try the lettuce wraps, I've never made them. What type of lettuce do you use?
 
btw... i find that cabbage leaves work better (and are crunchier) than lettuce for wraps. but yeah if i was using lettuce, romaine def.

I love Salsa!! I make mine this way....
2 small cans of garlic hunts tomato sauce
1 can of whole tomatoes
1 can of diced rotel tomatoes
1-2 fresh jalapenos seeded and diced
1/2 a small onion (optional)
a handful of fresh cilantro (optional)
Garlic powder, salt, and pepper to taste
2 ice cubes to make it cold (optional)

Blend in blender!
