you need to remember that you cannot spot reduce the fat you may have on your legs but as far as good exercises for the hamstrings, Squat is the king of exercises but if your looking for an isolation exercise hamstring raises are awesome (also known as nordics if you only do the eccentric phase)
 
I agree with Trusylver. Spot reducing doesn't work. But dead lifts should be one for you to consider. It is an excellent compound exercise that will strengthen your entire lower and lower back plus burn lots of calories.

Would angle weights help any or just hurt your back?
