Will this be enough to lose weight?

I am 5'0" and currently weight 150 lbs. Ideally, I'd like to lose about 30 pounds or so. I have started eating very healthily, but I was wondering if my exercise routine is enough for me to lose 30 pounds. I would like to lose it by May 2012, so that gives me about 7 months. I have started running on the elliptical for 30 minutes twice a day, doing pilates for an hour 6 days a week, and also doing a bit of circuit training 3 days per week. Will all of this exercise, paired with my healthy eating be enough to lose 30 pounds in 7 months?

nope.

Why no?

Cause you can exercise till your arms and legs fall off, doesn't mean a thing if you don't watch your calorie intake. Just 'eating healthy' doesn't do that. Healthy can still be too many calories. So, just based soley on what you listed? no.

I eat 1000 calories a day and its all healthy whole grains, fruits and vegetables.

The problem with this method is sustainability. You cannot sustain a lifestyle of 1000 calories a day, it just wont happen. Find something that works for you and stick with it. Find hobbies that require physical body movement (Cycling, running, things like that). You'll be happier in the long run. Remember, its a lifestyle change. Trust me, i've been on this bandwagon too many times...
