~What's Cookin' Tonight?~

i'm making grilled chicken breast (seasoned with fresh garlic, fresh rosemary, and little lemon juice) served over a spring mix salad & a roasted artichoke. :D I just got back from the grocery store and i cannot wait to start making dinner.

Mashed sweet potato with chipotle peppers.:flame:
Frozen mixed vegies
It was all really good I could have made a meal off of the potato!
Tonite I think I am going to try the hamburger trick but maybe add the leftover chipotle to the meat mixture!

Bump! I love threads like this!

Tonight we're having Shepard's pie (my man loves his man foods), which I'll make with a minimum of meat, and extra veggies. So long as the oven's going, I'm going to make up a big pot of chicken chili for a week's worth of lunches -- I'm on study leave, and it's so hard to be at home all day and not pig out!

What's everyone else having for dinner?
 
something I love to eat that is quick and healthy is brown rice, with kidney beans, corn, diced tomatoes (I buy them in the can and you need the juice), onions and green peppers. You can buy brown rice in bags that only take 10 minutes to cook for 2 cups.

When I was a kid my mom did this with white rice and put pork chops on top. It was awesome, but now that I am eating healthier I use brown rice and don't have the pork chop.

You just have to heat it up in the microwave. It is so easy to take to work and it is really filling as well.

Tonight is party night.

Ranchera-(carne asada marinated in orange and lime juice with onions and cilantro)
charro beans-pinto beans, bacon, jalapeno, tomato, onion, garlic, beer, s&p
veggie garnish-sliced avocado, radish and cucumber
fresh wheat tortillas

All washed down with my homemade margaritas, no icky mix for me.
1 oz tequila
1 oz Grand Marnier
3 oz lime juice
glass with salted rim and lime wedge

Dessert will be toasted marshmallows by the fire pit. I'll likely over do it later so I will be skipping my AM and PM snacks and I made a low cal salad for lunch. Party night is all about making adjustments so I can enjoy myself.
 
I actually tried this this week. I had been substituting yogurt for a lot of toppings on and then I thought, what about chicken salad? I love to experiment with new recipes in the kitchen so here's what I came up with. It's really refreshing tasting.

Diced chicken
chopped onions
chopped celery
add non- or low-fat yogurt as you would add mayonaise
garlic powder and pepper to taste
(can add salt if you NEED to, I have been leaving it out)
a little cayenne for some kick

Today I topped it with sliced tomato and cucumbers and wrapped it all in a Romaine lettuce leaf. Crunchy and lite, but filling: only around 160 cal. a serving.

Just wanted to share a great product that I found last night. I don't know if any of you have a weakness for tortillas, but I do! I LOVE flour tortillas. Anyhow, I found some multi grain tortillas made by La Tortilla Factory and they are wonderful (and im picky about my tortillas). They are called smart & delicious soft wraps. Simple and delicious recipe. Try to mix some chicken breast with broccoli. cook with some spices with less oil. It is good for loss weight as welll as building muscle.
