~What's Cookin' Tonight?~

Finally we got winter weather and it's cold.

This will be perfect tonight:

Crock-Pot Beef Stew w/lots of Veggies
Whole Grain - Multi-Grain Rolls
Salad

I've learned that beef stew doesn't have to be high calorie. I use round steak instead of stew meat...brown it in "Pam" cooking spray and and generous amounts of red skin potatoes, carrots and frozen peas.

Mmmm-mm Hearty meal! I can even add a biscuit and bring in a hearty helping under 500 calories!!
 
"A certain amount" are the key words, to me anyways.
Today I'm having ragout a la patte de cochon.

I'm makin' WW Spaghetti w/homemade meatsauce - Garden salads - WW-MG Garlic Rolls.

okay so I have know idea if this is really heathly or anything like that but dang it is good!!

Turkey lasagna

ground turkey breast cooked
broccoli steamed til done
mushrooms sauteed with some chopped garlic
cooked lasagna noodles
alfredo from a jar (cuz I can be lazy!)
mozzerella cheese

just layer the sauce, turkey, veggies, and cheese between the noodles and bake til warmed through.

It is a nice change to lasagna full of meat and marinara sauce!

My kids love it and we are making it for dinner tonight!

Didn't get ta make this yesterday bc my son called to stay later at the mall w/friends..lol..

He ate at the mall and hubby and I did frozen dinners.

Mine was a weight watcher's..lol

Tonight I am going to make vegetable lasagna with sliced tomatoes, mushrooms, spinach, ricotta, parmesean, and jarred tomato sauce. I looked carefully to make sure the sauce did not have the evil High Fructose Corn Syrup as a major ingredient -- and this one does not have any! Maybe someday I will make a whole lasagna from scratch -- but not tonight.

Grilled chicken with butterfly shrimp, greek potatoes, salad, rice.
Greek potatoes? Is that a certain type of potato or a preparation method?

I've been eating a lot of baked potatoes with salsa for topping. It's pretty hearty without being terribly fattening.

Yeah, just cut up a potato into quarters and season it salt, pepper, olive oil, oregano, garlic, lemon juice (or whatever you like). Then just put them into the oven and you're good to go.

Tonight I'll be having cucumber soup with grilled beef and garden salad.
 
I intended on cooking tonight but they were out of freakin' zucchini at King Soopers so I headed over to Whole Foods where I was tempted by the prepared food tables and gave up the idea of home cooking. I hate that they don't list calorie content on their stuff but it is dang tasty. I didn't eat much, a spoonful of daal, a spoonful of red curry tofu and some cucumber raita. Oh yeah they had some spiced cherry's on the antipasto bar so I grabbed a small tub of those and ate 6 or 7 for dessert. I washed it down with two small glasses of Jakes Fault CA Shiraz, good stuff.
