~What's Cookin' Tonight?~

I bought a spice called kickin' chicken and grilled chicken breats seasoned with that tonight. I also grilled a mixture of zucchini, green peppers, onions and tomatoes marinated in fat free Italian dressing. A little parmesan cheese sprinkled on top finishes it off. It was gorgeous weather here today, so grilling seemed like the right thing to do and it was yummy!
 
Due to a death in my family I have a fridge full of veggie trays that will never get eaten before they spoil so when I get home today I am going to make a huge pot of vegetable soup. And since it is snowing like crazy here today it is a soup makin kinda day!
 
the veggie soup was a big hit with my kids and boy did it free up space in my fridge!!

Tonight we are sticking with an oldie but a goodie. Parmesan Chicken! Something everyone on this site seems to like!! So do my kids thats why they begged me to make it! Personally a bowl of cold cereal would have done it for me!! Yep I don't wanna cook tonight but since I have no choice......:ack2:
 
home made Lebanese or are you going out to dinner? If home-made you should post some recipes. I am always looking to try something new!

Well my family has a lebanese restaurant...so I guess that would be homemade takeout? Do you know what recipe you'd like?

you know what I am not picky. Having never eaten Lebanese I would have know idea what kind of recipe to ask for. How about something simple and easy to start with and we can go from there!

Well, I'll start by giving you recipes for toum and hummus.

Toum is a garlic sauce, and it's great for dipping meat in. Just put 4 cloves of garlic, 1/4 cup of vegetable oil, and the juice from one lemon into a food processor. Add salt if you wish. That's done :p

Hummus is good for dipping chicken in but it's also good in a pita bread. It's also done in the food processor. All you need is the following: 1 can of chickpeas (save the liquid), 3 chopped cloves of garlic, one lemon's juice, 1/2 tablespoon of cumin, 1 teaspoon of chopped parsley, 1/4 cup of tahini, salt and pepper to taste.

I'd recommend marinating your chicken souvlaki-style since you don't have the equipment for real shish taouk.

Marinated yams: Chop yams into sticks and marinate in beet juice until they are pink. This is a good addition to salad or a pita.

If you want, you could make a pita with the chicken and toum (and/or hummus if you prefer it). Split the pita almost in half --a couple of inches on the bottom should still be connected. It should look like two circles stuck one to the other. Spread the toum onto one of the "circles" and then put some lettuce, sliced onions, marinated yams and tomatoes. Add your chicken.

Standard lebanese salad to serve with your meat or alone:
Lettuce, tomatoes, marinated yams, sliced onions, and sometimes jalapenos.
The dressing is made with the following: 2 tbsp tahini, 1 mashed clove of garlic, a pinch of cayenne pepper, salt to taste, 1 lemon's juice, and 1/3 cup of olive oil.
 
Thanks for the recipe Digg. I have copied it and added the things I don't already have on hand to my grocery list and this will be one we try out this next weekend! I will let you know how it goes over with the kids. With all the garlic in it I am going to have to say it will go over BIG. My kids love garlic!!

Tonight it is hash from all the leftover roast from last night!! Always a favorite with the kiddies!!
