This should be a fun thread.

I feel this is a great area for this topic bc I'm sure with many of the postings ppl are going to want to hear about/get recipes and you can share them in this section of course! ;)
 
Sunday Dinner:

We'll be havin' crock-pot beef stew w/lots of veggies, small salads, ww-mg rolls.

I just got back from the store, and I bought enough food for about 12 meals. I'm taking all the veggies and potatoes and cuttin 'em up into big chunks, and doing the same thing with the assorted meats. Then I'm filling up 12 different aluminum foil pouches I've made with the mixture, and am gonna pour different seasonings into each. Then when I need a meal, I just pull one of these bad boys out of the freeze and throw it on my handy dandy grill at med-low temp for ~an hour, and I got a nice hot dinner.

I've got a ton of different veggies and different kinds and cuts of meats, as well as different marinades. Each bag is gonna be different. Dinner is going to be a surprise for the next week or so!

As sad as it sounds, I'm actually really excited about this concept.

That's a fun idea -I've donet hat before -- just toss it in the toasteroven for an hour andyou've got a suprise dinner -don't forgetthe garlic :D

One of our favs is the hobo meals..

Pat out hamburger patties that have fresh chopped parsley mixed in with garlic powder - a lil celery salt - pepper - and cumin..

Goes on bottom of foil.. Lightly brush top of patties w/ev olive oil..

On top of the meat layer red onions, carrots, red pot. chunks, and anything else ya like.' S&P

Drizzle with ev oilve oil -

Grill/bake/or broil...Yummo!
 
I think tonight will be baked pork tenderloin, rice, and green beans. I am making that mostly because it is good to pack into containers to bring to work for lunches.
 
Hobo meals sound yummy. I have been putting off going to the store. I think that's what I'm going to have for dinner. I was going to make a hamburger patty and have fried potatoes(Pam), onions and peppers. Not a lot different but enough to spice it up.

changed my mind on dinner -baked eggplant parmesan for dinner tonite...

super easy

Take an eggplant, dont peel it, and slice it lengthwise into 1/4" ish strips.

Take a loaf pan, and add a layer of eggplant, some garlicly , spicey tomato sauce (home made preferred but jarred if you don't want to spend 20 minutes on making sauce)

add some fresh mozzarella and some fresh basil

repeat layers til out of eggplant.

put remaining fresh mozarella and some fresh grated parmesan cheese on top.

bake at 350 ish covered for an hour.

Bake uncovered until cheese gets lightly browned...

remove from oven and let set for about 20 minutes (this is even better the next day)

It was the first recipe I used when trying eggplant for the first time..lol
 
yeah, hobo meals are pretty amazing. Instead of hamburger meat, though, I went with cubed stew meat just for some different texture, and then chicken in some, and then cut pork chops in others. I've been REALLY lazy recently, and if I don't have anything easy to make, I have either been skipping dinner (and paying for it), or ordering something bad. This way, if I have an entire freezer shelf full of these little buggers (which are so damn delicious), there is no reason for me to skip a meal, or fund the papa john's driver's college tuition.
 
Although, a quick edit, I have gotten accustomed to putting down a little olive oil, then a layer of potato, because I've had bad experiences with the meat popping and ripping the foil while cooking, basically burning out the entire inside of the pack. The potatoes are an easy insulation (and they are the hardest thing to ensure that they get cooked).

Yeppers, my taters are always cubed so they cook fast/evenly.

I think it's great James that yer makin' those type of changes. :)

I'm like a tornado. Lots of noise, lots of air, and everyone always wants to come out and take a peek, and is incredibly impressed with the sheer magnitude and power of it. Women want me, Men fear me. I am the Quizat Haderach.

P.S. I bought a dehydrator yesterday for $25. I already made two batches of beef jerkey One was a Garlic / Black Pepper batch, and the next was a Ginger Teryaki. People at my work love me.

What's not to love... :D

Dehyrators are also good for preservative free fruit leathers too... and for making sun dried tomatoes... and lots of good things... have fun..
 
Tonight I'll be makin' my Creamy Penne Casserole. {I'll post recipe} :)

Sides will be: Romaine salad with fresh chopped veggies and Mashed Taters.

The taters are for hubby and son. I may measure me a small amount out..

Just depends on how I feel "control wise." I'm a recovering tater junkie! :D

Tonight's menu is...

1 lamb loin chop, grilled on the BBQ, 6 min a side
5 mini falafel
2 stuffed grape leaves (Dolmas)
1/3 cup marinated mushrooms
2 Tbsp hummus spread on 2 pieces wheat "everything" flatbread
2 Tbsp Tzatziki Sauce for falafel

Doesn't seem like much but it's a full plate, I had it last night too.
