I am trying to eat more veg as actually, they are something I don't mind (not so keen on fruit) and also they provide bulk at low calories! So what is everyone's favourite veg and what are your favourite things to cook with your favourite veg?
 
I'm gonna have to go with carrots, and I like them raw. I eat a little snack pack of baby carrots every day. They are nice and sweet and only 25 calories for the pack. They also give you tons of vitamin A. :)
 
My real favourites aren't on the list! Asparagus, mushrooms, runner beans, sweetcorn, etc. I try to eat greens often - spinach, rocket, water cress, broccoli, beans, lettuce, cabbage, etc.
 
my favourites - sweetcorn, mushrooms yum yum arnt on the list.i add them to my pasta along with veg such as peas, peppers etc to bulk it out, add a tomato based pasta sauce, herbs and protein (tuna, chicken)
so i voted for the much maligned sprout, but only if its cooked right. i love them. slim
 
what is marrow?

Of all the vegetables listed, the only ones I like are broccoli, and it must be roasted with garlic and olive oil.

I also like brocolli rabe, asparagus, brussel sprouts (roasted), bok choy, napa cabbage, mushrooms in any variety, snow peas, beets (roasted w/ balasamic vinegar and garlic)
 
I love broccolli with garlic and olive oil...also sometimes, dice up some mushrooms in there with some hot pepper and white wine..
 
I chose brocolli also! However I go through phases. Sometimes I like the flower and not the stem...and sometimes I like the stems and not the flowers!!
 
I couldn't add all the ones that I would have as there were only ten options added :). Marrow is a big green veg .. I can't remember what you call it in the US but something different. Tends to be over a foot long and you slice it and cook it as you would a courgette. I think.

You rarely ever see vegetable marrow in North America although I used to grow it for a customer when I was a vegetable seller. It is a summer squash similar in texture to zucchini.
 
I love black beans... yummm.. great source of protein & dietary fiber. I usually wrap (1/2-1c depending on how much I worked out prior) black beans (If canned, I make sure to rinse them first) in a whole wheat tortilla, chopped romaine lettuce, red onions, a couple slices of low sodium lean turkey breast with a few tablespoons of salsa. It's definitely filling and scrumptious!

Juuust recently I've been having baby carrots with low fat ranch which is good....but ever since I was little my fav has been broccoli...I used to eat it raw with ranch when I was like, 3 or 4... and now I love adding it to stir-frys and having it as a side-dish with maybe some low fat cheese melted or whatever
 
Depends on my mood and the day, but I love brussel sprouts, nuked, with a little pam, lemon pepper, garlic and salt on them. I also like mushrooms and onions sauteed in a little chicken broth or vegetable broth. I also like to cook up a big pot of spaghetti sauce and put mushrooms, onions and peppers in it - sometimes I'll throw squash in it - and I eat it like soup. I'm a big fan of veggies.
 
I love veggies. My favorite is cauliflower. I love it cooked with I Can't Believe It's Not Butter Spray. Yummy.

I also "fry" red potatoes in Pam with onions, mushrooms and red peppers.
 
I had to go with peas. Preferably fresh shelled ones! I also love broccoli, mushrooms, asparagus, corn, squash of any kind, fresh green beans, fresh tomatoes, carrots, cucumbers, and onions. I love most veggies raw except for mushrooms can't stand them raw yuck! Here is a zucchini recipe for all those about to have an over abundance of it coming out their ears!

1 small onion diced fine
2 cups zucchini chopped
2 eggs beaten
1/2 teas. oragano
salt/pepper
1/2 -1 cup shredded cheddar cheese

Preheat oven to 350. Mix all of the ingredients except for half the cheese. spoon into greasse casserole dish. Cover with remaining cheese. Bake uncovered 35 to 45 minutes.

I have no idea what the calories are or anything all I know is it is really really yummy!!:)
 
I voted for broccoli but, I consume legumes (beans/peas/lentils), mushrooms, tomatoes, spinach, cucurbits (cucumbers/squash/zucchini), and greens (collard/turnip) on a regular basis. I like to eat most of my vegetables by themselves generally sautéed or raw. Some find themselves in salads. Others end up in soups and sauces.
