Tuna Pasta Primavera Salad

*StarKist Pasta Primavera Salad

- 1 - 12 oz. Pouch Tuna

- 3 1/2 c. Steamed Broccoli/Chilled

- 1 c. chopped Red Bell Pepper

- 1 small can of sliced Black or Green Olives

- 3 1/2 c. cooked/chilled Whole Wheat Penne/Other Pasta

- 1 1/2 Tbs. Dried Basil

- 2 1/2 Tbs. chopped Green Onions {tops and all}

- 1 c. creamy Italian or Ranch Dressing

- 6 c. Romaine Salad Greens

- 1/2 c. Fresh Grated Parmesan Cheese

In a bowl, Combine all ingredients except Romaine & Cheese.

MIX well & chill for at least 30 mins.

Divide Romaine Greens amoung 6 plates/As many as you're serving -
Spoon tuna mixture over greens and garnish with cheese.

This really is a great recipe though and you can add/take away from it.

I love to add fresh peas that have been slightly steamed as well. YUM!
 
You can go very similar with a Nicoise Salad

6 small New Potatoes, boiled and cut in half
1 pound green beans, ends snipped off and steamed til bright green and chilled
1/2 pound mixed greens
1 cup artichoke hearts, canned in water is fine
1 large tomato, wedged
2 hard boiled eggs, halved
1/2 cup black olives, fresh are better than canned, but canned will do
1 (6-ounce) can tuna packed in water

Vinaigrette:
1 tbs white wine vinegar
1 tsp Dijon mustard
1 teaspoon garlic, smashed until paste
Pepper to taste
6 tbs olive oil

In a bowl, whisk together white wine, Dijon, garlic, and pepper. Drizzle in olive oil while whisking constantly. Arrange salad decoratively on a platter. Drizzle with the dressing.


tis really tasty - and even better with fresh tuna lightly seared but the packaged stuff will do in a pinch - this one is especially salad bar friendly..
