Fruit Kebabs With Honey-Mint Sauce

Makes 4 servings

Ingredients
Kebabs
3 juice-packed canned pineapple rings (reserve juice)
1 kiwifruit
12 cantaloupe chunks (1 ½ inches)
8 small strawberries

Sauce
½ cup fat-free plain yogurt
1 tablespoon honey
1 tablespoon pineapple juice (from pineapple rings)
1 ½ teaspoons fresh mint leaves, chopped
Pinch of ground cinnamon

Directions
To make skewers: Cut each pineapple ring into 4 pieces. Peel the kiwi, cut into 4 wedges, and halve each wedge crosswise. Thread the fruit onto four 10-inch to 12-inch wooden skewers, using 3 cantaloupe chunks, 3 pineapple pieces, 2 kiwi pieces, and 2 whole strawberries per skewer.

To make the sauce: In a small bowl, mix the yogurt, honey, pineapple juice, mint, and cinnamon. Serve as a dipping sauce with the skewers.

Per serving: 100 calories, 0g fat, 23g carbohydrates, 2g protein, 1g fiber, 30mg sodium

I've done those for years... makes for a fancy looking dessert - only I won't use canned pineapple - I use lots of melon - honey dew, casaba, watermelon.. or peaches -- really any fruit will do

the yogurt sauce is quite yummy too (makesa good sauce for dipping waffles into too)

It's also a great dessert to bring to parties... rather than the usual brownies or cookies...

for some added flavor if you soak the skewers first for about an hour or so - then you can grill the fruit... it adds a new level of flavor that's totally yummy

Wow yummy sounds even better!I am not a big pineapple fan but some of the fruits you listed looks like they would work!Tammy:)
 
really any kind of fruit can be skewered... it just has to be firm enough- watermelon is the toughest but it still works.

Pineapple is hard to skewer -- especially the canned stuff cuz it's a little slippery - I've done a grilled shrimp and pineapple kabob... that the shrimp marinates in the pineapple juice and garlic and jalapeno pepper... then skewered and grilled til it's cooked -the pinapple slides all over the skewer.. :D
