The holidays are coming, and I get to cook!

This year, we are keeping it simple for Christmas, I'm just having dinner with my dad.
We are having salmon filets, I'm looking for good recipes as we speak (tips would be most welcome), I'm thinking about serving it with some fried small potatoes and several nice vegetables. I'm thinking green beans and carrots. Maybe some salsa, I read that goes well with salmon. Maybe some dessert too, if my diet allows it, and some simple soup... So many ideas, so little time.
On boxing day morning, my dad and I are inviting the rest of the family for a nice breakfast. Fresh buns, tasty bread, maybe some eggs and tomatoes, nice toppings, it's gonna be great.

So what are everyone elses plans for the holidays? Anyone got tips on how to get through it while dieting?
 
One good way is to not host any big dinners so that there aren't any leftovers hanging around :)

So what did you end up doing?
 
I dug around the internet, and found delicious and simple recipes for fried salmon filet (the skin was deliciously crunchy), some sauteed carrots that blew my mind, steamed green beans that were slightly undercooked but still okay and some very nice salsa. I served fried potatoes with it all, and it was a huge success. My dad loved it, and so did I. There were only a few beans and some salsa left over, and neither of those are very calorie rich.
On second Christmas day, we had a breakfast with my father, brother and sister, and that was delicious too, though my dad insisted I take some of the leftovers from that.

I find that good food is so much better in combination with good company.
