Thai Style Chicken Salad

I absolutely hate rabbit food... don't like salads -they're so not satisfying for me -but this one - was pretty good...

Ingredients:
18 ounces chicken breast, steamed or boiled and shredded

4 cups watercress, chopped (i used 2 bunches of watercress)
1 cup fresh mint leaves
1 cucumber, sliced ( I used a seedless cuke)
1 red pepper, julienned
3 plum tomatoes, chopped


Dressing
2 tbs coconut milk
1 tbs fish sauce
2 tbs thai spicy chili sauce (sweet could be substituted)
juice of 3 limes


1 thai chili, seeded and minced for extra heat.

Directions:
Combine watercress mint, cucumber, tomatoes, and peppper in a large bowl... toss.

add shredded chicken and dressing

toss again and serve.

Interesting to put mint leaves in salad. I have never thought of that but I may have to try this out.
 
the dressing was superb... really light....

and the mint was a nice touch (basil might have worked too... ) but watercress has a very strong flavor - so the mint balanced it out a bit... and it wasn't overly minty -I'm not a fan of mint teas or mint jelly or even minty gum... this was just refreshing.. .

I lifted the recipe from a thai cookbook that borders had on their clearance rack for 2.99... and just did a little bit of tweaking to it... (like added the tomatoes and and used red peppers rather than green peppers and I like heat so I used the spicey chili sauce instead of sweet and added the thai pepper...
